Thai Basil Chicken

My Review

Usually, in a Thai Basil stir-fry, I get more assortment of flavors in each bite. I didn’t get that signature taste with this recipe, it was more like any regular old chicken stir-fry. We still enjoyed it, of course but, I wished for more than one kind of hot pepper, some ginger, and definitely more basil leaves.

We served it with… brown rice and papaya salad

Ingredients You’ll Need

  • 3 Tbsp sweet soy sauce
  • 2 Tbsp oyster sauce
  • 1 Tbsp fish sauce
  • 1/4 cup chicken broth
  • 1/4 tsp black pepper
  • 2 Tbsp vegetable, canola or peanut oil (we used EVOO)
  • 4 garlic cloves
  • 1-2 Thai or serrano chiles
  • 1 lb ground chicken
  • 1 red bell pepper
  • 1 cup Thai basil leaves

My Review

Whoa, I was impressed with this stew! I couldn’t believe how soft and tender the meat got and the “yogurt” topping was actually so lovely, even with the dairy-free kind we used. The broth was thick and hearty and the sweet potatoes were the perfect complement.

Ingredients You’ll Need

  • 1 cup canned unsalted diced tomatoes
  • 1 med white onion
  • 2 cloves garlic
  • 1/2 chipotle in adobo sauce
  • 2 Tbsp vegetable oil (we used EVOO)
  • 1 lg pork tenderloin
  • Salt and pepper
  • 1 Tbsp chili powder
  • One 8 oz sweet potato
  • 2 cups low-sodium chicken broth
  • 1 cup 2% Greek yogurt (we used Forager’s Unsweetened Plain Dairy-Free Cashewgurt)
  • 1/4 med head red cabbage
  • 1 med Haas avocado (we excluded this!)
  • 1 lime
  • 1/2 cup loosely packed fresh cilantro
  • Eight 6-inch corn tortillas, warmed

My Review

The only change I’d make to this recipe is the amount of hoisin sauce. It made the burgers a bit sweet but, other than that, yum. It was a fun switch-up from ground beef.

We served it with… baked sweet potatoes and Annie’s Vegan Mac

Ingredients You’ll Need

  • Nonstick cooking spray
  • 1 small carrot
  • 1 small red onion
  • 1 lb ground chicken
  • 1/4 cup panko
  • 1/4 cup hoisin sauce
  • 1 Tbsp grated peeled ginger
  • 4 Tbsp low-sodium soy sauce
  • 3 tsp hot Asian chili sauce, such as sambal oelek
  • 8 oz white mushrooms
  • 2 tsp toasted sesame oil
  • 1 lime
  • 4 hamburger buns

  1. Basil chicken is one of my favourite Thai dishes ever. I’m still looking for one that gets it right. I know it’s out there somewhere! The photos look delicious as always. I’d definitely go for the pork dish though Sage has a big objection to sweet potatoes…

    1. Let me know if you find that recipe! πŸ˜€ Boyfriend actually doesn’t love sweet potatoes that much either but he will tolerate them lol. Maybe you could try the stew with regular potatoes??

  2. I love getting a taste of everything in stir fry’s too, and I agree, usually thai basil chicken you can sort of taste the basil as well as the other veggies and I love it. I really like the hint of ginger it has also. Thanks to Alex, I like ginger haha

    Remind me again, these recipes are from last year right? Because there’s no way you’re eating stew right now when it’s really hot over there lol. I read that it was 128 degrees F on Sunday at Death Valley, and that they expect a heat wave on the southwest heading east to FL or something like that…

    I don’t think I’ve ever had the pleasure of eating yummy chicken burgers so I think I may give those a shot someday πŸ™‚ I finally made the baked garlic buffalo chicken wings you posted about not too long ago for Alex and get this: he loved them! And so did I!! πŸ˜€ πŸ˜€ πŸ˜€ πŸ˜€ he wants me to make them again already LOL
