Sweet and Sour Pork and Vegetable Stir-Fry

Recipe found on Woman’s Day
My Rating: 4 out of 5

My Review

Ooo, man, the pork was juicy and easy to chew. The sauce was quite simple and leaned more towards Western flavors over authentic Asian ones but, that didn’t make it bad or anything. I would have also liked a few more green/crunchy veggies. Like, broccoli or snow peas?

Ingredients You’ll Need

  • 1 cup long-grain white rice (we used brown rice)
  • 2 Tbsp hoisin sauce
  • 1 Tbsp fresh lime juice
  • 2 Tbsp canola oil (we used EVOO)
  • 2 carrots
  • 1 red bell pepper
  • 1/2 lb pork tenderloin
  • Salt and pepper
  • 1 cup bean sprouts
  • 2 scallions

Easy Hearty Sausage Dinner

My Rating: 2 out of 5

My Review

It seems every other Recipe Reviews I post has some sort of sausage sheet pan, doesn’t it? Sadly, this was one of my least favorites. Everything just tasted soggy… I would try it without the chicken broth if we were to make it again.

Ingredients You’ll Need

  • 1 lb kielbasa or turkey
  • 3 med. sweet potatoes
  • 1/2 cup chicken broth
  • 1/2 to 1 tsp dried thyme leaves
  • 1/4 tsp pepper
  • 2 cups coarsely chopped cabbage
  • 1 med. green bell pepper
  • 1/2 med. onion

Baked Garlic Buffalo Chicken Wings w/ Ranch Dip

Recipe found on Do You Even Paleo?
My Rating: 5 out of 5

My Review

Both the buffalo sauce and the “ranch” were OUTSTANDING! Even if the “ranch” tasted more like a dill-flavored veggie dip, I loved it. If you have chicken wings, I would highly recommend making them with this recipe! It’s not too spicy but, definitely has a tang from the Frank’s. The garlic pops out at you a bit, as well, though it’s more subtle than I expected.

We served it with… celery and carrot sticks

Ingredients You’ll Need

  • 4 lbs chicken wings
  • Salt and pepper
  • 3/4 cup Frank’s Red Hot sauce (usually I don’t care about name brands but you NEED Frank’s for this)
  • 1/4 cup ghee or grass-fed butter (we used Earth Balance Original)
  • 1 Tbsp coconut aminos (we used low-sodium soy sauce)
  • 1 Tbsp apple cider vinegar
  • 1 tsp sea salt
  • 4 garlic cloves
  • 1/2 mayonnaise
  • 1/2 cup full fat coconut milk
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp fresh parsley, chopped

  1. Thanks for the tip to omit the chicken broth when making that sheet pan meal.

That is so funny about the “ranch” dressing. I think it’s the third one you’ve come across where they put DILL in it. I may be wrong, and would need to do some research, but I’m pretty sure that OREGANO is the herb in ranch dressing. As long as it was tasty, that’s all that matters though. Those wings look and sound delicious!!!! #ILoveWings

  2. Ok never mind. I researched and some use dill, some use oregano, some use both. Whatever the case, my #1 favorite ranch dressing is whatever they use at Jack in the Box to dip your chicken tenders in. LOL

    1. Ooo, interesting. I’ve never tried the Jack in the Box ranch. Sonic’s is pretty nasty though, huh? I liked the watered down one at my high school the best. I dunno why. πŸ˜›

    1. Yes!! It’s super possible to mess up buffalo wings lol. But this time, wow!! They were delish. πŸ˜€ The veggies in the sausage dinner ruined everything. They were so soggy. 😦

  3. True story: I actually don’t care much for chicken wings. I certainly don’t hate them, but I’ll never order them off a menu or make ’em at home. They’re so just darn messy, and I hate the amount of napkins you go through to keep your hands clean. I may be in the minority here, but gimme some good ‘ole mozz sticks any day over wings!!

    1. No way! I love mozz sticks but, they are more of a side dish for me. I’ll have wings AND mozz sticks, please lol but, I honestly don’t mind making a mess when eating, I don’t usually use a napkin until the end!

    1. I am so excited for summer fruit!! Everything is so cheap & juicy. πŸ˜€ Stir-fries are so quick for boyfriend to whip up, he makes them so often.

Let me know if you make the wings! They were freakin’ delicious!!!
