Hey loves!! I’m sorry I forgot to mention in my last Journal Entry that my dad, his wife, and my 3 little brothers have been here in Vegas since Friday. I’ve been out and about with them all weekend so, I haven’t had time to hop on the blog. I can’t wait to share all that we got up to with you on Wednesday. ❀

Paleo Bacon Cheeseburger Soup

It’s almost impossible to not like something with bacon in it, am I right? And, this soup was no exception! The broth thickened up nicely and the sweet potatoes paired extremely well with the saltiness of both meats. I enjoyed all the fun, different textures and ingredients.

Ingredients You’ll Need

  • 1 lb ground beef
  • 1 tsp sea salt
  • 2 Tbsp avocado oil (we used EVOO)
  • 1 yellow onion
  • 2 cloves garlic
  • 1 cup carrots, shredded
  • 4 stalks celery
  • 1 medium white sweet potato
  • 5 cups chicken broth
  • 1 cup coconut milk
  • 1/2 tsp black pepper
  • 1 Tbsp nutritional yeast (we skipped this)
  • 3-4 slices of cooked bacon
  • 1 Tbsp parsley

Oh my gosh, I never knew crispy chicken could be done SO perfectly at home!!! Every bite I took, you could just hear the loud, amazing crunch. The unique flavors of the mustard and spices soaked all the way through to the meat and it was just so juicy. YUM!

  • vegetable oil (we used EVOO)
  • 2 Tbsp unsalted butter (we used Earth Balance Original)
  • 1 cup Dijon mustard
  • 1/2 tsp cayenne pepper
  • 1 1/2 cups panko breadcrumbs
  • 3/4 cup freshly grated Parmesan (we skipped this)
  • 1/4 cup chopped fresh chives
  • 2 tsp paprika
  • 8 small bone-in chicken thighs
  • salt

We couldn’t find any condensed tomato soup so, we just used Annie’s Homegrown regular tomato soup and it actually didn’t turn out too bad; maybe only a bit more liquidy than we expected. There wasn’t anything wrong with this recipe but, I’ve had better Sloppy Joes in my lifetime, for sure.

  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 can (10.75 oz) condensed tomato soup
  • 1/2 tsp salt
  • 1/4 tsp chili powder
  • 6 hamburger buns

      1. It was soooo good, but for the mustard part, I used another recipe that I’m crazy about and can’t deviate from JUST YET, but I used this deviled chicken recipe that you shared to make the panko coating. So good! Once I can let go of that other recipe, I will try this full recipe. LOL

    That bacon cheeseburger soup sounds incredible as does the chicken dish! 5 out of 5 for both so they must be good!

    I’ve never had a sloppy joe before, but I remember hearing about them in Mary-Kate and Ashley’s β€˜it takes two’ ahha! I may have to try one with vegetarian mince!

        Ah I'm hungry now!! I'm definitely going to have to try veggie sloppy joe for sure and I'll totally let you know. Maybe I'll follow this recipe but just alternate the mince ❀

  2. Omg how nice that your family is with you! I can’t wait to read those entries! WOW a cheeseburger soup, that sounds like a recipe for disaster but it turned out so good?! And your fried chicken jeez, I always read your blog at the worst time (late night) AHHH! Okay the sloppy joes definitely look…sloppy af, I’m not surprised they ain’t that good. Woops! HAHAHA

      Lol, the soup didn’t quite taste like a cheeseburger but, I could see why it was named that at the same time. It turned out super yummy! & oh my gosh, that fried chicken was better than I ever expected! πŸ˜€

      AW sloppy joes are meant to look that way! Even the good ones do LOL.

    1. LMAO! Mostly all the traditional burger ingredients were used EXCEPT bread. That would’ve been sooo strange. Luckily, it turned out so yummy! It would def work out with some vegan meat or no meat at all even!

    i’d love to try the cheeseburger soup sometime, it sounds like a nice comfort dish to eat when it’s cold or rainy outside LOL

    i’m always a bit hesitant when it comes to fried chicken and Alex always likes to say I don’t like fried chicken, lol. i like the crunchy chicken too but it has to be juicy and i’ve had plenty that are SO NOT! this one however looks absolutely delish!!!!!! i’m getting so hungry!

    i’ve never had a sloppy joe and personally, it doesn’t look as appealing to me? XD sorry! haha but i am thinking that i should try it someday, i just wouldn’t want to order it and then not eat it if i don’t like it haha

      Well, you liked Shaq's Big Chicken & that's fried chicken so Alex doesn't know what he's talking about lol. I know what you mean about some not being juicy though! Yuck! We were really impressed with this recipe. πŸ˜€

      LOL I don't think sloppy joes are meant to look appealing, that's why they are called "sloppy" πŸ˜› you could easily make them at home! I've actually never been to a restaurant that serves them lol. I've always had them at American childrens' bday parties when I was younger haha.

      1. Yeah the Shaq’s Big Chicken was amazing. I actually tried the little ones they have at KFC, the chicken littles I think they’re called? I was surprised that the chicken was nice and juicy.

        Ah okay, I hardly ever see them except people eating them at home, I will look into the ingredients and if it’s something I would eat, I will try* to try them LOL

        1. I haven’t had KFC in so long but, I used to love that place, man. Their chicken is so greasy, crispy, & satisfying from what I remember. Their potato bowls were on my fave things to order, too. & their mac & cheese, mashed potatoes, and baked beans lol!

          You may like sloppy joes but, they aren’t anything like, too exciting, y’know? Kind of like spaghetti meat sauce but in a bun.
