Hello, hello! It’s been nearly 3 weeks since I last wrote a Journal Entry but, I have still been taking photos of our dinners! 😛
So, let’s just catch up on those right away…
On April 2nd, we had frozen salmon fillets that boyfriend marinaded with a spicy Asian-inspired lime sauce. We had a cucumber salad, that he also put together himself, and some frozen popcorn shrimp.
On April 3rd, you guys heard from me via my Friday Faves! We had pan-fried beef with mushrooms and onions, some weird green bean knock off, and a cauliflower rice mix.
April 4th was my dad’s birthday. Last year, he was here visiting us. 😦
This year, boyfriend and I had chopped steak and eggs with cute little potatoes he diced up. I said, “try to make it as triangular as possible like the restaurants” lol and he really did. They turned out adorably!!
April 5th came around and we switched it up with some pork instead of beef.
We had quick microwave quinoa and green beans for our sides.
On April 6th, we had pasta with meat sauce.
I did a face mask before bed. It was a really nice one and will be featured in my upcoming Empties & Discards. Hopefully, I can get that done and published on Tuesday!
On the 7th, we ate leftovers of the “goulash” because we had a ton left.
April 8th, we had a lovely chicken sheet pan with boyfriend’s ginger bbq sauce concoction to dip.
On the 9th, we went back to beef and mushrooms with a frozen mix of veg.
If you’re wondering why we have so much beef, it’s because there was this sale on them where we bought 3 huge packs for the price of one at Albertsons. 😛
On the 10th, we finally had some chicken drummies and another frozen mix of cauliflower rice.
Boyfriend’s teriyaki glaze was probably one of the best ones we’ve ever had. It was SO good.
Here’s a photo of Sushi and me that night, too. He makes me hold him when I am on my computer chair because it’s really only big enough for one of us!!
April 11th, we had brats, baked beans, and corn.
We didn’t have buns so we improvised with regular bread and it turned out perfectly fine. I topped my brat with fried garlic and onions, sriracha, Annie’s ketchup, and stone ground mustard.
On the 12th, wow, boyfriend made an amazing chicken veggie soup with crispy bacon to top it with.
Theeeen, on the 13th, we had steak again. This time with just the bottled ginger sweet and sour sauce we have in the fridge and frozen mixed veg. Boyfriend definitely seasoned the meat somehow, too, because it had a nice bit of extra flavor.
On Tuesday, April 14th, we DID NOT receive our stimulus checks with the rest of America. Somehow, we both were part of the “glitch” in the system. I’m extremely annoyed but, so over worrying every single day.
We did have some DELICIOUS teriyaki chicken thighs with baked beans and frozen broccoli for dinner, though.
On April 15th, boyfriend made this tomatoey beef soup.
It was good but, a little sweet? We couldn’t figure out why when he listed all the ingredients he used…
On the 16th, we had a lovely chicken stir-fry with jasmine rice!! Boyfriend was so lucky to find some when he went shopping a couple days ago.
Yesterday, we had amazing top sirloin beef. He cooked it to absolute perfection, no sauce needed, and it melted in my mouth with every bite. Not chewy whatsoever!
The garlic (Earth Balance) “butter” pasta was freakin’ fantastic, too! The canned green beans and canned mushrooms weren’t so bad, either. 🙂
5:20-5:40 PM dinner break
We just had a kielbasa sheet pan but, I’ll share a photo of that the next time I write a Journal Entry. We’ve still been keeping up with The Voice and Masked Singer and we’re also almost done watching American Horror Story S9.
Only boyfriend goes out nowadays and I’m just stuck, melting at home. I’ve been keeping myself occupied with The Sims 4 and Animal Crossing Pocket Camp. Honestly, I like the app better than the 3DS version.
I’m still waiting for our state’s government to figure out how to pay self-employed folks; it’s been a week since they updated us and boyfriend even tried to apply and work for Instacart but, hasn’t heard anything back. We are pretty much fucked in the financial department but, whatever, I guess. EVERYTHING is out of my control and what will worrying do anyways? Nothing besides take away the time I could be ENJOYING (it’s just so hard to enjoy anything when I’m always worried but, I’m working on it…).
Oh and my aunt FINALLY got her test results back and she was POSITIVE for COVID-19. She said it feels like there is glass in her chest when she breathes and that she can’t taste a single thing. She has been ordered by the docs to stay quarantined away from her family and have them drop things off for her at the door to her bedroom, no sharing plates or anything like that.
On the bright side, we ended up skipping Sushi’s follow-up appointment for his chin acne. It cleared up with just the wipes and some shampoo. The antibiotics started making him not eat and dazed so we just stopped giving them to him. Luckily, he was able to recover without it.
I know that tons and tons of us are all in the same rocky boat right now and I hope things will fix itself and everything will be better soon. Stay safe and healthy, that’s all that matters. FOR NOW, at least we have toilet paper, food, and our internet is still connected. These 3 things are complete luxuries to me at the moment.
