Hi friends, quick update on life before I jump into my Recipe Reviews for this week. I know I haven’t been around on the blogosphere as much but, reading and writing have NOT been helping me escape my reality.

Honestly, just completely ignore my posting schedule until everything outside opens up again… I’m never disappearing altogether or forever but, I will definitely not be as present as before.

Alright now, sorry I have been such a negative Nancy. At least we have recipes all the way from December to talk about. 🙂

Salmon Tarragon Pasta

Oh man, something about rotini-shaped pasta, they seem to always hold in any flavor added to them. The salmon was flaky and moist and the Brussels weren’t at all bitter. The tarragon definitely stood out yet, wasn’t overpowering. I liked the mix of uncommonly used veggies!

Ingredients You’ll Need

  • 2 tbsp olive oil
  • 1 red onion
  • 4 cloves garlic
  • 1.5 cups Brussels Sprouts, chopped
  • 2 salmon fillets, skin removed
  • 2 cups cooked gluten free pasta (we used regular rotini)
  • 1/2 tsp tarragon
  • 1/2 tsp smoked paprika
  • 1 tsp fresh parsley chopped
  • 1/2 cup coconut milk

Okay, wow, this was not tasty. The “broth” was like straight up tomato sauce; texture and flavor-wise. Ick… I don’t know. I would just recommend ANY of the chili recipes we’ve tried in the past over this one.

Ingredients You’ll Need

  • 1 lb ground beef (browned)
  • 15 oz cans dark kidney beans (drained and rinsed)
  • 15 oz can of chili beans
  • 15 oz can of black beans (drained and rinsed)
  • 14.5 oz can of tomato sauce
  • 14.5 oz can crushed tomatoes
  • 2 cups chicken broth
  • homemade chili seasoning (recipe below)

Chili Seasoning

  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp ground black pepper
  • 1/4 tsp onion powder
  • 1/8 tsp ground cayenne pepper
  • 1/8 tsp garlic salt

The inclusion of the sourdough bread was GENIUS! I was really curious about how it would taste when I first spotted the recipe– I wondered if the bread would be super crispy and hard like a crouton or… nice and pillowy inside. I *wanted* the latter and that’s actually what we got!! Every bite was delicious.

Ingredients You’ll Need

  • 1/2 pound sourdough boule, cut or torn into 2-inch pieces
  • 1/2 pound slab bacon, cut into 1-by- 1/2-inch lardons
  • 1 large baking potato—scrubbed, halved crosswise and cut into 3/4-inch wedges
  • 1 large red onion, cut into 1-inch wedges
  • 2 tablespoons cold unsalted butter, diced
 (we used Earth Balance Original)
  • 4 oregano sprigs
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup extra-virgin olive oil
  • Kosher salt
  • Black pepper
  • 6 whole chicken legs

  1. Don’t feel bad for not being as active as you have been before, we all go through phases like that and need to have a break away, everything and everyone is still here when you return. A lot of people are the same I think ❤

  3. Thanks for the recipes! Definitely want to try the salmon and the chicken with sourdough! Yum!!! But I will have to venture into Walmart to get my hands on a sourdough bule. I don’t think the sliced sourdough I bought that looks like regular sliced bread would work. Ha ha.

    I’m so sorry you’re having a hard time right now, Hunida, being locked up and all. l hope they get rid of this stupid virus soon so you can get your life back. Hurry up with a vaccine already!!! What’s taking these scientists so long, anyway?? Ha ha.

  4. Yass thank you for the recipes! As a novice cook, I’ve been trying to find easy to follow recipes during quarantine, and I think that salmon tarragon pasta is right up my alley. Totally relate to reading and writing not helping. I’ve been find that more ‘active’ things, like cooking and cleaning, have been more positive for me at the moment. Stay safe girl!

      Lol, boyfriend loves brussels too. He tells me I’m crazy when I say they’re bitter, but I feel like I taste that sometimes! & the chili was so bad. 😦 Sheetpan was awesome, though!!!

    i never would have thought to add salmon to a pasta dish?? lol it seems a bit odd but also interesting, i do like the mix of veggies in there, you're right, those are barely used in other recipes so that's nice
    omg shame about the chili! i was hoping it was good but oh well 😦 i've been kind of craving it lately too, i will need to look up a recipe too 🙂
    aaaahhhh the sheet pan! i was honestly just thinking today how i want to try a sheet pan recipe and here i am reading this one LOL i cannot believe it has sourdough on it, i loooooveee it so much and so does CL, i believe we have a ton of chicken too, not necessarily drumsticks or thighs, i think we have boneless but it wouldn't hurt to try it with those too right??

      Ugh I miss seafood! The salmon pasta was awesome, definitely had a unique texture mixed together but it so yummy! The chili was gross lol… if you're looking for a good recipe, I can send you our favorite one we tried. 🙂

      That sheet pan was fun!! I used to hate sourdough but I've started to like it more & more lately. It was like crunchy yet still soft in this meal… mmm. ❤ I'm sure any cut of chicken is fine!!
