My Review

While a little tomato-heavy, the ground beef still shined through and gave this soup a deep, hearty flavor. It was simple yet, absolutely satisfying.

We served it with… Sprouts’ crusty sourdough bread

Ingredients You’ll Need

  • 1 tablespoon vegetable oil
  • 1 lb ground beef (at least 80% lean)
  • 1 cup chopped onions
  • 5 cloves garlic, finely chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon pepper
  • 3 cups beef-flavored broth
  • 1 bag (16 oz) frozen mixed vegetables
  • 1 can (14.5 oz) organic diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce

The mustard glaze was fantastic!! On top of the kielbasa, it charred a bit and oh my gosh, I loved it. It tasted awesome with the veggies, too. Sour, sweet, AND savory. ❀

Ingredients You’ll Need

  • 1.5–2 pounds smoked kielbasa sausages
  • 2 sweet red peppers
  • 1 large yellow onion
  • 3 tablespoons brown mustard
  • 2 tablespoons light brown sugar

    1. Lol yay!! So happy you enjoyed the recipe as much as we did. 😁 We are still hanging in there & I am hoping strip clubs will be part of Phase 2 reopening, happening on June 2nd if all goes well! But it might not be. 😦 I cannot freakin’ wait anymore though!!! I wanna go back to work so bad. 😭

We *do* still have a bit of meat shortage here. The shelves are never completely full anymore. How about for you guys??

      1. I haven’t been to the store in a couple weeks now, but last time I went they finally had Charmin back on the shelves. I bought one package since we still have two packages of yucky no-name brand. It’s nice to have the GOOD stuff in case you have a PROBLEM and require a lot of it.

I hope you get to go back to work June 2nd!!!!! Fingers crossed!
