Hello my fellow WordPressers. We are in such a crazy time right now. Like, we are actually going through a worldwide pandemic, aren’t we??

I thought these kind of crises could and *would* only happen in films or fiction novels but, “the Rona” has proved me wrong. I keep wondering when the heck I’ll wake up from this terrible nightmare… then, I realize… this is real life.

Someone please tell me it will all be over soon. 😭

I’ve been stressed, panicked, sad, angry etc. and I even thought about ditching my blog altogether. It just seemed fake to continue writing like normal when nothing in my life will ever be again. Or at least, that’s how it feels at the moment. Hopefully, I am just being dramatic, right?

Well, anyways, it’s obvious I couldn’t live without my blog and talking/sharing with YOU so, I came back today with an all new Recipe Reviews. I know ingredients are hard to find at the moment and I want to make it clear, they have been for me as well. The dishes below were meals we had back in Nov. 2019.

You can bookmark this for after the apocalypse, I guess.

New Orleans BBQ Shrimp

My Review

I’m not sure if it was just the specific Creole seasoning we used or if the recipe calls for way too much but, the saltiness from it was a bit overpowering. A few veggies could’ve been added in, too. I’m also not sure why “BBQ” is even in the name. The shrimps were plump and juicy, though (probably more thanks to boyfriend than the recipe).

We served it with… white jasmine rice

Ingredients You’ll Need

  • 2 tablespoons butter (we used Earth Balance Original)
  • 3 cloves garlic, chopped
  • 1/4 cup hot sauce
  • 1/4 cup Worcestershire sauce
  • 1/3 cup beer, wine or broth
  • 2 tablespoons lemon juice
  • 2 teaspoons creole seasoning
  • 1/2 teaspoon ground black pepper
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter, chilled and cut into 1/2 inch pieces (again, we used Earth Balance)
  • salt to taste

My Review

If you’re a regular reader of my Recipe Reviews, you have to have noticed that we like to try all these different goulashes. We now know what we like and what we’re looking for in them. Sadly, we ended up being really disappointed in this one. The sauce was so bland– it honestly tasted like tomato water instead of a flavorful sauce and I didn’t like the green peppers. They just didn’t work well with everything else.

Ingredients You’ll Need

  • 1 pound ground beef
  • 1 large onion, chopped fine
  • 1 green pepper, diced
  • 1 clove garlic, chopped
  • 1 14.5-ounce can diced tomatoes
  • 1 15-ounce can tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt (or more to taste)
  • pepper to taste
  • 2 cups elbow macaroni

My Review

Mmm, the homemade teriyaki sauce had the perfect sweet and salty combination going. It was light and felt healthy yet still tasted absolutely delicious. There was a fun mixture of veggies and textures and the sauce soaked into the huge noodles beautifully.

We served it with… Mrs. Miller’s Old Fashioned Extra Wide Egg Noodles

Ingredients You’ll Need

  • 4 boneless, skinless chicken breasts, cut into bite sized pieces
  • 2 large carrots, sliced diagonally
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium broccoli head, broken into small florets
  • 1.5 cups snow peas
  • 1 Tbsp sesame seeds

For the homemade teriyaki sauce

  • 3 Tbsps coconut aminos, Bragg’s liquid aminos, or low sodium soy sauce
  • 1 Tbsp apple cider vinegar
  • 2 Tbsps raw honey
  • 1 Tbsp freshly grated ginger
  • 2 cloves fresh garlic, minced or grated
  • 1 tsp sesame oil
  • 1 tsp gluten free flour

  2. I am glad you didn’t ditch your blog. We need to hear from you. Yeah, things kind of suck now, but I would miss your blog if you gave it up.
    I write about Today’s Perfect Moment…but those are in rather short supply right now. I am not giving up, but I am not blogging at full capacity. Hopefully I will find a few things to bring a bit of joy to some people out there.

  4. Lately, I haven’t had the motivation to write any new content even though I have time now. I too feel a wave of various emotions which I never thought I could feel all at once. It is a very confusing time for all of us, and I think you made the right decision to keep your blog! Reading your blog posts cheers me up, and one of these days I really should try some of your recipes! Do you have any dessert recipe reviews?

    Definitely don’t ditch your blog! We all need the bonus entertainment right now. I don’t plan on discussing the pandemic much in the coming weeks. I figure people would prefer to read about the best trip I’ve had on magic mushrooms or look at photos of my chonky cat.

    1. LOL well, I have been using baby wipes for my ass since before this pandemic but, boyfriend was using those square napkins that we found a couple packs of at the store since it all started. 😛 Luckily, we found a tiny 4-pack of TP just yesterday at the grocery store for him, though.

      I don’t think I *can* ditch my blog! I missed it so much while I was “away.” & oh my gosh, I would absolutely love to read about the best trip you had on ‘shrooms & YES to photos of your cat!!! ❤

      I have to admit I kind of like the royal family's clothing LOL & I wishwishwish I could find Being John Malkovich somewhere to watch for free! I will share more photos of my kitties in coming posts, too. 🙂 Thank you for all your ideas, support, & motivation!! ❤

  6. I am choosing hopeful this situation will end soon, but am quite anxious about it regardless. I am less scared of getting sick and more afraid of the other ramifications this is having.

    I’m glad you didn’t give up on your blog during this time. For me, blogging has been one of the few comforting things / ways to spend my time in doors.

    It’s a bummer that 2/3 recipes didn’t turn out as hoped. The teriyaki chicken sounds fantastic though!

    1. At first, I was more scared of the ramifications, too but, seeing how serious this virus is, I’ve been starting to worry about my health/catching it, too. 😦 But I am def trying my best to stay hopeful instead!

      I’m really glad I decided to come back to blogging. It has actually relieved a lot of my stress. Just how normal it feels & how the community is still here. ❤ I love it!!

    Noooooooooooooooooo you can’t leave us! I know how much I look forward to your posts and would be majorly sad if you disappeared.

    I think that 1/4 cup of Worcestershire sauce had a lot to do with the saltyness of that shrimp dish..

  9. I hear you – the world has gone mental and I can’t believe this is happening to us all. I also understand the conflict with the blog – do you continue like everything around us isn’t crashing down? It’s a conversation I’ve had with myself too. But I think having something in our lives that gives us a sense of normalcy, and doing what we love to do, is gonna help us remain sane throughout this all.   11. Girl I’ve been feeling the exact same way I’ve been feeling another wave of anxiety and mild depression coming my way. I noticed it a few days ago when I didn’t wanna get out of bed. Personally, I choose to keep blogging for the simple reason that it serves as a distraction, not just for myself but for others. At times like these is when I need to be entertained more. It’s not that I’m pretending that nothing is happening but I so badly need that for my mental stability. I hope that makes sense. Anyway, if you quit blogging I would be very sad to see you go but would understand and support you regardless. ❤ I’m a text away if you ever wanna vent to me.

    The name of the first dish is….misleading I feel like? Lol
    I’ve tasted creole before and was not a fan…but don’t understand why bbq is the name either lol.
    Is goulash like a casserole kind of dish??
    At least one recipe worked! Sheet pans are not only easy but usually don’t disappoint. 🤗🤗

    1. Ahh, I think I am about to have my period so my hormones are making me all upset again. Ugh. I’m sorry that you’ve been having anxiety & mild depression again. 😦 Boyfriend & I have been sleeping in so late these days. I think we need to start setting an alarm because it may be making us worse.

      The shrimp had no BBQ flavor so I don't know what was up with the name. I've liked creole flavoring on a lot of things but, meh. This was SALTY lol.

      Goulash is usually made in one pot on the stove. It's like a mix of stuff, same as a casserole but those are usually made in the oven! 🙂

      I'm glad the stir-fry saved our week from being a complete fail!

      1. Really? I’m still waiting on mind I’m late and feeling all stressed isnt gonna make it come any faster 😖
        And yeah, not having a set routine or proper sleep schedule can definitely make you feel even worse. I know that usually affects me so I’ve been trying my best to get quality sleep but it’s been hard this week. I’m hoping I can start again tomorrow morning.

I had some scheduled posts on the blog and felt unsure if I should just get rid of it or keep it and ended up keeping them because I think we all need a bit of normalcy.
