Ooo, I just remember the amazing, flaky salmon melting on my tongue when I ate this chowder. The broth had a nice thickness to it– the cornstarch definitely worked its magic. It was so heartwarming yet, not greasy or oily in the slightest. There was such a fun assortment of veggies and textures, too.

Ingredients You’ll Need

  • 2 carrots
  • 1/2 red bell pepper
  • 1/2 leek
  • 3 Tbs. butter (we used Earth Balance Original)
  • 3 Tbs. flour
  • 5 cups chicken broth
  • 1 lb. small new potatoes (we used baby reds)
  • 1 cup frozen corn kernels
  • 1 lb. skinless salmon
  • 1/2 cup flat-leaf parsley
  • salt & pepper
  • 1 lemon

Never mind the chicken because for me, those carrots were the star of the show. They were both charred to perfection but, the flavor soaked into the carrots way more and the burnt pieces were such a joy to have in each bite. This recipe does lean towards the sweeter side, though, so make sure that’s something you’re looking for if/when you make it. 🙂

Ingredients You’ll Need

  • 6 bone-in, skin-on chicken thighs
  • Salt
  • 2 Tbs. sesame oil, preferably toasted
  • 1 lb. medium carrots
  • 2 Tbs. soy sauce
  • 2 Tbs. Sriracha
  • 2 Tbs. unseasoned rice vinegar
  • 1 Tbs. honey
  • 1 1-inch piece ginger
  • 3 scallions
  • Toasted sesame seeds, for serving

We should have, 100%, used smaller/traditional egg noodles. These were WAY too big to soak in the sauce– that wasn’t that good anyways… it was super floury and milky. Not that creamy goodness we were looking for at all.

Fortunately, the meatballs were there to fill us up. They were pretty good.

Ingredients You’ll Need

  • 1 onion, finely chopped
  • 1 tbsp coconut oil, for frying (we used EVOO)
  • 1 tbsp fresh sage, finely chopped
  • 2 lb ground pork, 900g (we used 1 lb)
  • 2 tbsp almond meal/flour (we used regular flour)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1.5 cups gluten free beef broth, 375mls
  • 1 tsp fish sauce
  • 400 ml full fat coconut milk, 1 can
  • 3 tbsp arrowroot, (optional) (we used corn starch)
  • salt and pepper, to taste
  • 1 zucchini (we used wide egg noodles)

  1. Oh Lord…please forgive me for laughing over the meatballs on those noodle slabs!!!! I couldn’t figure out WHAT that was. Swiss cheese???? Never would’ve guessed noodles. Wow…that recipe calls for 2 tablespoons of flour AND 3 tablespoons of corn starch? That is A LOT of thickeners.

    The other two recipes look delicious!!!!!

    1. Lol no, I am happy that it made you laugh!! 😀 It actually really does look like cheese now that you say that hahaha. Boyfriend hates those noodles because they are so big but I kind of love them with the right sauce. 😛

      BUT YEAH, there were way too many thickeners & you could taste every bit of it too. Yuck.

      The other two were def winners!! 😀 ❤

  2. Salmon chowder sounds good? I’ve never had chowder before though lol.
    Whoa the chicken sesame thighs look sooo goood!!! I bet I would think the same of the carrots haha they look so yummy!!
    Omg before I read about the recipe I assumed the noodles were like slices of cheese and then I was like “why would she use cheese for that anyway?” 🤣🤣 anyway yeah that threw me off a bit, too bad the sauce wasnt good I always feel like when something doesnt turn out creamy, or when the noodles either soak up too much sauce or nothing at all, it ruins it all.

    1. We really liked the salmon chowder! I am used to more creamy, dairy-filled ones so I was impressed. 🙂 & the carrots had such a nice burnt flavor, totally outshining the chicken! But that was good too lol.

      You are the second person to say that pasta looked like cheese slices. I totally see that now hahahaha. & I so agree! If the noodles soak up everything but still have no flavor, the dish is ruined!

      1. I should give chowder a try but I’d be stuck with a full meal if I don’t like it haha
        Well I guess I haven’t seen pasta/noodles that thick. I think the thickest ones I’ve seen are the wide noodles but compared to these they’re much smaller LOL
