Thai Chicken Satay Wrap

My Review

The spinach wrap we used was so good! It was so soft, melting onto my teeth with each bite. The peanut sauce wasn’t overly sweet or nutty; it went well with everything. This was such a delicious, simple dinner!

Ingredients You’ll Need

  • Ginger, fresh – 1/2 tsp, grated
  • Peanut butter, creamy – 1/4 cup
  • Brown sugar – 1 Tbsp
  • Water – 4 Tbsp, plus more until smooth and pourable
  • Vinegar, rice – 2 Tbsp
  • Soy sauce, low-sodium – 1 Tbsp
  • Hot sauce (opt) – to taste
  • Oil, cooking – 2 Tbsp + 1 Tbsp
  • Soy sauce, low-sodium – 1 Tbsp
  • Fish sauce – 2 tsp
  • Turmeric, ground (opt) – 1/2 tsp
  • Coriander, ground – 1 tsp
  • Chili garlic sauce – 1 tsp
  • Chicken breast tenders – 1 1/2 lbs, sub chicken breasts, sliced into strips
  • Cucumbers – 8 oz, sliced into strips for dipping
  • Wraps, large like tortillas, flatbread or naan – 4
  • Cabbage, small and red – 1/2 head, thinly sliced or shredded
  • Vinegar, rice – 2 Tbsp
  • Sugar – 2 tsp
  • Sesame seeds, white – 1 tsp

Eh, we weren’t the happiest with this recipe. There wasn’t much flavor, if I’m being honest. Everything was bland or tasted like a bit of tomato juice and that’s it. 😛 Having only bell peppers and onions alongside the meat was boring, too. I wanted something crunchy!

We served it with… Sprouts Brown and Wild Rice Mix

  • 1 ½ pound beef chuck (cubes)
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon olive oil
  • 2 cloves garlic (diced)
  • ½ cup red peppers
  • ½ green peppers
  • ⅓ cup olives
  • ½ red onion (diced)
  • 1 tablespoon capers
  • 1 small tomato (diced)
  • some Jalapenos (optional)
  • Cilantro
  • 1 cup tomato sauce
  • 1 cup water

My Review

I don’t always love pork tenderloin but my oh my, was this tasty!! The mustard, garlic and herb rub on top was out of this world. There were so many different flavors combining together perfectly on my tongue. The meat was also super moist and oh, so easy to chew.

We served it with… roasted potatoes and broccoli

Ingredients You’ll Need

  • 1.4 lb. pork tenderloin
  • Salt and Pepper
  • 1 tbsp dijon mustard
  • 1.5 tbsp olive oil
  • 3 large cloves garlic chopped
  • 1 tbsp italian seasoning
  • 1/2 tsp coarse sea salt

*P.S. We always use Pink Himalayan Salt and a Coarse Black Pepper Grinder.

          1. I wasn’t sure what they meant by “chili garlic sauce” but thought maybe it’s the stuff you get at Panda Express. Googled it and I think it is that stuff. Looked for it on my Walmart app but it says “Check in store; availability unknown”. Not helpful, Walmart app!!!

            Instead of Mission wraps they have something called “Ole Mexican Extreme Wellness, carbless” spinach & herbs wraps. Hmm…I may need to run to Bill’s first and see if he has the Mission wraps. I want my carbs, thanks..

            I see how you crossed out “optional” for the hot sauce. LOL

              Hope you can find it at your Walmart! It’s very yummy with a lot of stuff. I even like it with pizza haha.

              I feel weak without my carbs!!

  1. Oooh the satay wrap looks amazing! I’ll have to try it at some point,.especially with the red cabbage. I hardly eat that haha
    I haven’t tried any Caribbean recipes, but that looks fairly interesting. Too bad it lacked flavor.

    1. They were really good but, I think I remember you told me you weren’t the biggest fan of peanut sauce?? You may not like that part. 😛 Red cabbage is so yummy though.

      The Caribbean recipe sounded interesting but yeah, sadly… wasn’t the best.
