Simple Meatloaf

My Review

The meat did not stay in loaf form and the ketchup-based topping wasn’t my favorite. It was too sweet and there wasn’t any beefy richness; it was rather bland.

We served it with… roasted garlic green beans and Sweet Earth frozen Vegan Cauliflower Mac (which we rate a 3 out of 5)

Ingredients You’ll Need

  • 1/2 green bell pepper, chopped
  • 1/2 small onion, chopped
  • 1 1/2 pounds lean ground beef
  • 2 large eggs, beaten
  • 3/4 cup uncooked regular oats
  • 1/4 cup ketchup
  • 1 1/2 teaspoons salt
  • 2 tablespoons butter (we used Earth Balance Original)
  • 1/2 small onion, chopped
  • 1/2 green bell pepper, chopped
  • 3/4 cup ketchup
  • 1 tablespoon cider vinegar

One Pan Cajun Chicken with Potatoes

My Review

The Garden Veggie cubes we used were more of a paste than a crumble so, boyfriend spread it on the skin and it gave the chicken such a nice crisp, full of flavor. The Cajun spice stood out, biting my tongue just a hint, going just perfectly with the red onions and potatoes.

Ingredients You’ll Need

  • 3 chicken legs (we used thighs)
  • 4Β large potatoes, cut in quarters or halves
  • 2 small red onions, cut in quarters
  • 5 cloves garlic, crushed
  • 2 tablespoons Cajun spice mix
  • Salt and fresh ground black pepper
  • 1 chicken bouillon cube, crumbled (we used Edward & Sons Garden Veggie Cubes)
  • 3-4 Tbsp olive oil
  • 1 scallion

Turkey Chili with White Beans

My Review

Not sure I’m a fan of white beans and the turkey was kind of dry. The diced tomatoes overwhelmed the soupy broth, too.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, crushed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 pound lean ground turkey
  • 2 cups fat-free, less-sodium chicken broth
  • 1 14-ounce can chopped tomatoes, with liquid
  • 1 15-ounce can great northern beans, rinsed and drained
  • Juice from 1 lime
  • Ground black pepper
  • 1 cup fresh cilantro, chopped

  1. I dont think I’ve ever had meatloaf lol. This one doesnt look as appetizing but whoa! The cajun chicken came through! That looks amazing!
    The Turkey chili sounds like it can be good, not sure about white beans either I’ve had them once before and wasnt a fan.

    1. Lol boyfriend loves meatloaf but to me,, it’s alright sometimes, I guess. πŸ˜› This one was weird & wouldn’t stay together.

      The Cajun chicken was super yummy!! & I was surprised that it had a little spicy bite to it. πŸ™‚ & glad you agree about the white beans! They were nasty lol.
