My Review

The chicken skin turned out so crispy and wonderful with a nice salt and peppery flavor. I didn’t detect too much garlic or anything else, really, it was just simply good chicken and potatoes with some onions.

Ingredients You’ll Need

  • 6 to 8 bone-in, skin-on chicken thighs
  • 1 lb (450g) potatoes, peeled quartered
  • 1 red onion, quartered
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons minced garlic powder
  • ½ teaspoon hot cayenne chili powder
  • 2 tablespoons chopped fresh scallion
  • Kosher salt and freshly ground pepper, to taste

My Review

You could definitely taste the garlic in this one, and mixed with the honey? Oh my. It was so dang yummy! The salmon was cooked to a flaky, tender perfection and every inch was covered with the lovely sauce. I personally wouldn’t call it “spicy” but, I’m pretty sure my tongue is immune to such a small amount of hot sauce so, do beware of that if you make this.

We served it with… roasted asparagus and Earth Balance “buttered” noodles

Ingredients You’ll Need

  • 12 oz (350g) salmon fillets, cut into 2-3 strips
  • 1/4 cup (60ml) honey
  • 4 cloves garlic, minced
  • 2 tablespoons whole-grain mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon apple cider vinegar or 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce of your choice
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon chopped cilantro
  • 1 lime, sliced into wedges

Pesto Baked Pork Chops

My Review

Pork chops aren’t my favorite, I usually find them dry and chewy but, boyfriend loves them so, I will eat them once in awhile for him. However, this turned out super tasty! The meat was actually juicy and the pesto was better than any jarred kind I’ve tried. It was extremely savory, almost buttery, with a small sour bite. Mm, mm!!

We served it with… steamed broccoli and Annie’s Homegrown Cheddar Flavor Vegan Mac

  • 4 pork chops
  • 2 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1 cup fresh flat-leaf parsley leaves, plus more for serving
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 small shallots, peeled and root ends trimmed

  1. Can you believe I didn’t see this post until AFTER I got home from grocery shopping? Oh well…next week!!! All three recipes look delicious. The question is, WILL my potato pieces cook all the way through if I make that yummy chicken recipe? I am such a loser when it comes to oven potatoes and any kind of chicken. LOL

  2. I’ve been wanting to make baked chicken for a while but Alex sometimes has a specific idea of what he wants to eat and I like to let him decide sometimes lol.
    That combination of spice, garlic and honey sounds absolutely wonderful for salmon! Omgg!!
    I dont believe I’ve ever actually tried anything with pesto and idk if I’d be a fan? Which is why I never order it lol. I may* try making it at home but…at the same time, if I dont like it, who will eat it? Lol

    1. Every time I let boyfriend decide what he wants to eat it’s meatloaf, chicken wings, sausage, or chili. That’s why we have those meals quite a bit. 😛 The baked chicken was super good though, tell Alex to give it a shot! & the salmon, too! It was amazing.

      I really like pesto & there are a few different kinds. It’s really easy to make & doesn’t require that many ingredients, it wouldn’t be a huge waste if you made it & didn’t like it. 😛

      1. That makes sense lol. Alex tends to choose the same meals again and again too whether we cook at home or go out to eat. We actually havent meal planned since we got back from Vegas haha. It took us a long time to get back into our routine for some strange reason but now we just decide what to eat either the day of or the day before based on how cold it is outside and what we have in our fridge and pantry 🤣🤣
        Okay I’ll have to try making it in small quantities then

        1. There was SO much going on after your vacay, with all the holidays & celebrations. It’s understandable that it took you guys some time to get back into a solid, normal routine.

          But, how do you decide what to buy at the grocery store/what do you stock your fridge & pantry with? If I don’t find recipes first, we don’t know what to buy lol.

            And usually we have an idea of what we might want to make, so we get the ingredients we need. It’s a very weird way of planning lol. We do try to get the basics so we still have something to eat even when we don’t make full elaborate meals.
