Sausage, Pepper, and Cauliflower Fried Rice

My Review

The biggest problem with this recipe was the chicken broth, it was totally unnecessary and made all of the ingredients so wet and mushy. The different seasonings didn’t quite mesh well together and it tasted extra black peppery.

Ingredients You’ll Need

  • 1/2 cauliflower head, cut into small florets
  • 1/2 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 onion, sliced
  • 9 ounces smoked sausage, sliced (not ground sausage)
  • 3 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon garlic powder or minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 cup low-sodium chicken broth
  • Salt and fresh cracked pepper
  • 1/2 teaspoon Cayenne pepper, optional
  • 1/2 teaspoon paprika, optional
  • Fresh parsley, chopped

Okay, so, originally this recipe tells you to make zucchini noodles but, we used spaghetti noodles instead because we don’t leave out our carbs. What we didn’t realize was… that not only was the zucchini supposed to replace the noodles but, it was also the only veggie?? Eating JUST beef was really unappetizing and not at all satisfying. The lemon garlic sauce was a bit too sour and oily, too.

Ingredients You’ll Need

  • 1 1/2 lb (650g) flank steak, sliced against the grain
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons butter or ghee *(we used Earth Balance Original)
  • 1 lemon, juice and zest
  • 1/4 cup (60ml) low-sodium chicken broth
  • 1/4 cup chopped parsley
  • 1/4  teaspoon crushed red pepper flakes
  • Salt and fresh cracked black pepper, to taste

Steak marinade

  • 1/3 cup low-sodium soy sauce
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1 tablespoon Sriracha sauce

If you read my Journal Entries, you may remember back in October when I mentioned we made a weird raspberry salad for dinner? Well, if you do– this is it.

The dressing was so hard to explain. It was sweet yet sour, with a hint of raspberry and too much balsamic. It was as thin as water and barely gave the cabbage any flavor but, somehow, the aftertaste was strong and terrible. The chicken saved the day but, did NOT complement the salad. It was also a bit dry– definitely could’ve cooked for a shorter amount of time.

Ingredients You’ll Need

  • 1 green cabbage, halved lengthwise and thinly sliced crosswise
  • 2 (9 oz) boneless, skinless chicken breasts
  • 1 1/2 – 2 cups matchstick carrots, or 2 medium carrots cut into matchsticks
  • 1 red bell pepper, cut into small cubes
  • 2 handfuls of croutons *(if you are dairy-free, make sure to check the ingredients when picking out your bag)
  • 1/2 cup cilantro leaves, chopped
  • 3 chopped spring onions, green and white parts
  • 1 teaspoon poppy seeds, toasted *(we used sesame seeds)


  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/4 cup chopped spring onions, green and white parts
  • A handful of raspberries


  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons finely minced ginger
  • 3 tablespoons olive oil
  • Juice of one lime
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon Sriracha
  • 2 – 3 cloves garlic, minced
  • 1 tablespoon honey

  1. Oh gosh, how disappointing. The cauliflower fried rice actually sounds like it could be a yummy meal too with the correct recipe.
    Idk how to feel about zucchini noodles to be honest? I was never a fan growing up, I thought it was the most disgusting vegetable I have ever tried lmao.
    Hmm… not feeling the salad dressing for the last recipe lol. Sounds awful. 🤣🤣
    I’m sorry all of these recipes were sub par. Hopefully you’ll have yummier recipes this upcoming week. I have no idea what to make but I know I’m hungry for sometbing new-ish or at least something different lol.

    1. That cauliflower rice recipe would have been really good with NO chicken broth. Lol I actually really love zucchinis but, I get why you hate them. 😛 That raspberry dressing was super strange!

      We had a bad week but, it happens!! I hope you find something new & different to try for dinner. ❤

  2. Oh! Not the best meals you’ve had then lately Hunida… the lemon beef dish looks interesting?!?! Like imagine just a bowl of beef and one veg 😂😂 sounds like some kind of diet meal! You neeeeeed carbs soo… that definitely must have been intended to be some kind of low calorie dish or smth! Anyway, the last dish looks the nicest of the three but still, it’s a shame none of them were that great! Thanks for sharing!

    1. LOL, yeah I felt like I had ‘mad cow disease’ after eating that noodle dish. This week really was NOT the best in meals! 😛 I do think it was like a diet meal that we followed. The chicken was good in the last dish, at least! Thanks for reading, Jennie. ❤

  3. The worst when you try new recipes and they are disappointing! I tried a fajita recipe that called for additional stock and I thought it was weird and it came out so watery that I just ate it over rice. I don’t know where this adding additional liquids comes from but it’s a waste! I would have used regular noodles too & been disappointed, I don’t like veggies noodles for some reason. All of your food looks pretty though 🙂

  4. You know, I’ve noticed that a TON of recipes that I’ve searched for to make with sausage almost always include chicken broth if it isn’t a tomato sauce. What gives!? That’s a bummer about the Steak Noodles. They look delicious, but I definitely need some veggies!

    1. That’s so weird! We actually made another sausage dish that included chicken broth today, too! If you search through my reviews, we have tried a ton that are just simple sheet pans– no liquids. 🙂

      Lol yeah, the steak noodles were a fail. Super lemony & boring! Def needed some veg.

  5. Dressings are so hard! It’s totally about balance and what you’re in the mood for. I had a TJ’s salad kit for lunch today and decided to add tuna to it…the dressing definitely did not go well with the tuna. That was totally my bad! Still ate it 🤷🏾‍♀️
