Paleo Beef Bowl

My Review

Our bowls are too small and it was so rough getting everything to fit– the picture obviously didn’t turn out well, either. 😛 The beef, however, did! It was very flavorful and super tasty, just the right amount of soy sauce and heartiness without being too heavy. There was also a huge variety of veggies and my palate never got bored.

Ingredients You’ll Need

  • 1 TBS coconut oil (we used EVOO)
  • 1 head broccoli, chopped
  • 1/2 red onion, diced
  • 2 garlic cloves, chopped
  • 1/4 cup fresh Thai basil leaves (or regular fresh basil), chopped
  • 1 inch of fresh ginger, finely chopped
  • 1 lbs 80/20 grass fed ground beef
  • 3 TBS Coconut Aminos (we used reduced sodium soy sauce)
  • 1 TBS coconut sugar (we used raw sugar)
  • 1 tsp fish sauce
  • 1 tsp salt
  • Juice from 1/2 lime
  • Basmati rice or lettuce greens to serve over
  • 2 carrots, shredded
  • 2 scallions, sliced Purple Cabbage
  • Fresh Basil
  • Fresh jalapeño
  • Lime wedges

My Review

The shrimps were plump, perfectly cooked, and had a lovely garlic-basil flavor to them. Sadly, the sauce didn’t soak into the pasta, at all. It tasted bland as heck so, we ended up having a lot of leftovers but, without any of the shrimp.

  • 2 tablespoons olive oil
  • 8 oz (220g) medium shrimp, peeled and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika or more, to taste
  • Kosher salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 4 Roma tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 6 oz fresh spinach
  • 3 cloves garlic, minced
  • 8 oz (220g) penne or spaghetti

My Review

Boyfriend said the whole ‘foil pack’ thing was a waste of time and supplies and I have to agree. At least, for this recipe. The zucchini rounds were soggy and the chicken didn’t have any crisp edges. I did like the mustard sauce, though, and personally think this would have been better baked flat on a sheet pan.

We served it with… Annie’s Homegrown Vegan Shells & Cheese in Creamy Sauce, we usually buy the Cheddar Flavor and prefer it much more than this one.

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 6 cloves minced garlic
  • Pinch salt and pepper
  • 1/3 cup honey
  • 2 tablespoons whole grain Dijon mustard
  • Chopped fresh parsley
  • Crushed chili pepper
  • 4 zucchini, sliced
  • 1 pound (450g) grape tomatoes, halved

  1. Thought the chicken would be best and yess i hate moist food so i always stay away from foil wrapped so you can get a nice dry crisp at the top! DID NOT expect the paleo bowl to be so good! And that pasta looked like a sure win but bleahhh!!

    1. The chicken looked the best but, did not win the taste contest lol. It definitely would have been nicer with some crispness– I hate moist food, too. 😛 The Paleo Bowl was super tasty, surprisingly but, yeah, the pasta was so disappointing. I could eat those shrimps all day though!!

      1. If I ate them as snacks I would be overweight haha then again I’m a sedentary person. Trying to change that this year though! 🧘‍♀️🌱

        Your photos are clear, not dark at all. I like how you use clear plates to feature each dish. Also, I like how you made the feature image “faded” that appears in the reader. Recently, I’ve seen some bloggers use a similar effect.

  2. That paleo beef bowl is definitely the way you want to start eating in the new decade! If I was going to do any diet, it probably would be the paleo diet. I love how it’s so focused on protein. But I would miss dairy sooo much!

  3. I was disappointed to see how the pasta and shrimp combo turned out! :/ Also, I’ve tried so hard to love Annie’s Vegan Mac n’ Cheese and something about it never really sat well with me. HOWEVER, I will say that Annie’s GF Mac n’ Cheese is my fave on the market!

    1. Same! The shrimps were so yummy & then the pasta came in to disappoint lol. At first, boyfriend didn’t like the Annie’s Mac & Cheese but, now he’s starting to like it more. I think you def have to get used to the taste. That’s really good to know about the GF kind though– I always wondered about it. Maybe we’ll pick it up next time. 🙂
