Dairy-Free “Buttermilk” Chicken

The skin on the chicken turned out soggy, the crisp parts happened because boyfriend decided to broil them for a quick minute after they came out. It didn’t help much. The almond milk sweetened things up way too much and the flavor was bland. The meat inside tasted like absolutely nothing.

We served it with… a baked sweet potato and asparagus

Ingredients You’ll Need

  • 1 tablespoon lemon juice
  • 1-1/4 cups almond milk
  • 2 teaspoons plain soy yogurt
  • 3 teaspoons cayenne pepper
  • 3 teaspoons mustard powder
  • 4 garlic cloves, peeled and bashed with the flat of a knife
  • 2 teaspoons sea salt and plenty of freshly ground black pepper
  • 2 teaspoons maple syrup
  • 2-1/4 pounds chicken thighs and drumsticks
  • Olive oil

Okay, I cannot fairly rate this because when I look at it, I remember the splotchy skin and upset stomach (the tuna we bought from Sprouts gave us food poisoning!). The recipe copped out a little since the dressing was store bought instead of homemade. We found one we liked so of course, the salad was good. We loved the radishes and the crust on the tuna.

Ingredients You’ll Need

  • 1 (5 oz) pkg baby romaine (we just used a head)
  • 2 cucumbers
  • 4 radishes
  • 4 green onions
  • 1 tsp. black sesame seeds (we only used the white ones)
  • 1 tsp. white sesame seeds
  • 2 tsp. kosher salt
  • 1 tsp. black pepper
  • a pinch of crushed red pepper
  • 2 tbsp. olive oil
  • 10-12 oz. ahi tuna steak
  • Sesame vinaigrette dressing

Ooo, we eat these “pasta and tomato meat sauce” dinners a lot so, we know what we like. This one was A+. Super simple with lots of beefy flavor, the exact right amount of sweetness, and a tang of tomato.

We served it with… toasted garlic hot dog buns

Ingredients You’ll Need

  • 1-1/2 cups uncooked medium pasta shells (about 4 ounces)
  • 1 pound lean ground beef (90% lean)
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

*Note: We always use Pink Himalayan Salt and a Black Peppercorn Grinder.

  2. What a shame that the chicken didn’t turn out well – chicken dishes freak me out when the meat doesn’t come out correctly.

    Also, OMG hope you are both okay after getting food poisoning. That is miserable!

    The meat pasta looks so yummy though!

    1. Lol ugh, I hate when any food doesn’t turn out well. 😭 & thank you, the food poisoning passed quickly, it was so scary though! & I always love a good meat sauce with pasta! πŸ’—
