Oven Baked BBQ Chicken Drumsticks

I forgot what kind of BBQ sauce we used but, honestly, all this recipe takes is a good one. I liked how it wasn’t super saucy and instead, the flavor was packed into the crisp skin and juicy meat.

We served it with… baked beans, Brooklyn Farm Girl’s DF Garlic Mashed Potatoes, and roasted green beans

Ingredients You’ll Need

  • 12 chicken drumsticks
  • 1/4 cup olive oil
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • 1 1/2 cups BBQ sauce or to taste

Ooo, the seasoning was so delicious! I could taste all the different spices in every bite of the tender steak. If I were to pick one fajita recipe to eat over and over again, it’d be this one!

Ingredients You’ll Need

For the Fajita Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

For the Lettuce Wraps

  • juice from 2 limes divided
  • 3 Tablespoons olive oil divided
  • 2 Tablespoons fresh cilantro leaves chopped plus more for serving
  • 1 Tablespoon Dijon mustard paleo/keto brand as necessary OR Worcestershire sauce
  • 1 pound skirt or flank steak cut into 1″ strips or cubes
  • 4 medium bell peppers seeded and thinly sliced I used red yellow, orange and green
  • 1 medium red onion thinly sliced
  • 1-2 Tablespoons unsalted butter (we used Earth Balance Original)
  • 1 head butter lettuce leaves washed and dried
  • sliced avocado and lime wedges for serving

Wow, I truly wasn’t expecting this to turn out so spectacularly. I usually think of bacon as a side protein, not a main one, so I thought I’d feel as if something was missing in this pasta.

Boy, was I wrong! The sauce was a sweet, fresh tomato flavor, one that’d be perfectly fine on its own. Paired with the bacon, though, it was a party on my tastebuds. The saltiness was exactly what was needed to boost this recipe up to a 5 star rating!

Ingredients You’ll Need

  • 160 g / 5 oz spaghetti or other long strand pasta of choice
  • 1 tsp olive oil
  • 150 – 180 g / 5 – 6 oz bacon, diced
  • 1 garlic clove, minced
  • 1/2 onion, finely diced
  • 400 g / 14 oz canned crushed tomato
  • Salt and pepper
  • Pinch of sugar, if needed
  • Extra virgin olive oil
  • Finely chopped parsley

*Note: We always use Pink Himalayan Salt and a Black Peppercorn Grinder.

It’s a party πŸ’ƒπŸ»πŸ’ƒπŸ»πŸ’ƒπŸ» that fajita seasoning sounds so packed with flavour… I’m going to have to try that to pair with some kind of veggie substitute lol! Love anything with flavour!! Also that pasta dish with the tomato and bacon is totally my type of dish- I used to love bacon pasta before I went veggie! Have you tried it with pesto and cheese rather than a tomato sauce, with some sweetcorn too? Omg I used to LOVE that! Thanks for sharing beautiful!

    1. Lol yess it is a party!! πŸ’ƒπŸ½ I was surprised they were all so yummy, too. You could totally try the fajita seasoning with a veggie substitute!! I hope it’ll be yummy!!

      Wow, bacon pasta is so satisfying. I have had pesto pasta before but not with bacon, cheese, or sweetcorn… mmm sounds amazing.

  2. I haven’t had oven baked bbq chicken in a LONG time I actually kind of miss it now lol
    I’ll definitely have to try this fajita recipe soon and see if Alex likes it too.
    The bacon tomato pasta looks so dang good!!

  3. The drumsticks were delicious!!!! I will make that recipe again, using thights this time, but I have to make something else for Mom. After cooking the drumsticks, I removed the skin from hers because I know she doesn’t like BBQ sauce. Well, the flavors/smell made her think the chicken had gone bad. I could not convince her that it was fine. She was just smelling/tasting the spices, and, unfortunately that Hunt’s BBQ sauce had liquid smoke in it and that stuff smells nasty. Liquid smoke I mean. Anyway, she refused to eat the chicken and then I worried about myself for the next 24 hours because I had eaten one drumstick and the yummy BBQ-saucy skins off the other 3.

    Luckily, the chicken was fine and nobody got sick.

    So yah, next time I’ll make thighs and I will cook a plain thigh for her in a separate pan and I’ll make sure whatever BBQ sauce I buy does not have liquid smoke in it. LOL Good Lord…

    But ya! Really delicious recipe!
