While simple, this steak and potatoes meal was really fun. I am such a sauce-lover and the three that were included in this recipe were all different and quite tasty. The potato chips were crisp and the steak was juicy.

- 2 Tbsp. Horseradish Sauce
- 2 Steaks

Sadly, unlike the first meal, this recipe was way too plain and there was nothing there to give it any pizazz. It really just tasted like beef and carrots stuffed into a sweet potato. The seasoning could’ve went a bit further, somehow. Maybe some kind of sauce could’ve been added?
Ingredients You’ll Need
- 4 small sweet potatoes, scrubbed and washed
- 4 medium carrots, 2 roughly chopped and 2 shredded
- 1/2 medium onion, roughly chopped
- 1 plum tomato, chopped
- 2 cloves garlic
- 2 tablespoons plus 1 teaspoon red wine vinegar
- 1 teaspoon ground cumin
- Kosher salt
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Freshly ground black pepper
- 2 tablespoons olive oil
- 3/4 pound lean ground beef
- 1/4 cup chopped fresh cilantro

The SW ranch was on the runny side but, I kind of liked that– it was more of a dill, veggie dip flavor over a ranch, though. There wasn’t much of a spice, like you’d expect from something called “Southwest.” Still, it was good, and the chicken patty was even better. It wasn’t dry and definitely tasted like Buffalo.
We served it with… Daiya Deluxe Alfredo Style Cheezy Mac, extremely roasted green beans, lettuce, mushrooms, and a whole wheat hamburger bun
Ingredients You’ll Need
- 2 lb ground chicken
- 1 large egg (beaten)
- 3 1/2 tbsp tapioca flour
- 1 1/2 tsp garlic powder
- 3 tbsp Franks Hot Sauce
- 1/2 sweet onion (diced)
- 1/4 cup green onions
- 1 tsp salt
- 1 tsp mayo
- 1/2 tsp pepper
- 1 tbsp ghee for frying (we used Earth Balance Original)
Southwest Ranch
- 1 cup Whole30 Compliant Mayo
- 1 tsp salt add another 1/2 tsp if needed
- 1 tbsp dried chives
- 1 tbsp dried parsley
- 2 tsp dill weed add 1 more tsp if desired
- 1 tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp apple cider vinegar
- 1 tsp white wine vinager
- 2 tbsp coconut milk (canned)
- 1/2 tsp onion powder
- 2 tbsp Franks Hot Sauce
- 1 tsp lime juice

Getting potatoes to be cripy is such a hassle but omg I’m surprised you didn’t have to boil it and also Home Chef’s website layout is so sleeek I love it! Thanks for introducing it! Oh gosh that dry plain potato, WELL when I eat something like that, I always go, AT LEAST ITS HEALTHY. HAHAHA!

I was impressed how crispy the potatoes were, even though some were a bit thicker, they were still yummy! I’m glad you like Home Chef’s website, Cordelia! π & I didn’t even feel healthy eating that sweet potato, it was greasy & kind of heavy, lol. π

I was expecting that stuffed sweet potato to be good when I saw the photo then I saw you only gave it a 2 out of 5! Oh no πππ I bet some cheese in it would have been tasty (dairy free) but Iβm surprised the garlic and onion didnβt help! Definitely try it with a sauce next time… if you ever try it again after that 2/5 πππ

Lol it just needed some more pizazz! You couldn’t even taste the garlic & onion, when I saw it in the ingredients list, I was surprised. π Cheese & sauce would have definitely helped! Maybe we’ll try another similar recipe but, not this one again lol.

Ooo that buffalo chicken patty seems so tempting and like something I would want to try. What a bummer about the stuffed potato though!!

I love the idea of stuffed sweet potatoes but they’re such a hard food to get right! Half of the sweet potato recipes I’ve tried haven’t turned out. They need the right seasoning!
At least the first recipe was good!

Sucks that the baked sweet potato one wasnt great. I havent had baked sweet potatoes I wonder what that would be like if it was more flavorful.

As a side, I like plain baked sweet potatoes– soo yummy!! It was the beef that needed some seasoning. π & the chicken patties were actually so good!! The mushrooms worked well on top, too. β€

What a shame about the sweet potato, it looks so good in the picture! Maybe a saucier beefy mixture would have been better? Sweet potatoes are usually so good, so that’s really sad, lol!
