Lemony Chicken Saltimbocca

Recipe found on For The Love Of Cooking
My Rating: 3.5 out of 5

My Review

We have had bacon-wrapped chicken before but, not prosciutto. It tasted a little too peppery and the texture was thin, almost plasticky? I wasn’t the biggest fan. Nothing beats or can compare to bacon, I guess!

We served it with… Vegan Butter Garlic Noodles w/ Toasted Breadcrumbs (Recipe found on This Savory Vegan, Rating: 5 out of 5) and a green bean, carrots, red pepper veggie mix

Ingredients You’ll Need

  • 3 boneless and skinless chicken breasts, pounded thin
  • Sea salt and freshly cracked pepper, to taste
  • 9 fresh sage leaves
  • 6 slices of prosciutto
  • 3 tsp olive oil (divided)
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 tsp cornstarch
  • Fresh parsley, chopped
  • Lemon wedges (optional)

Hearty Bison Taco Chili

Recipe found on Wise and Well (no longer available)
My Rating:
4 out of 5

My Review

I’m sad I can’t share this recipe with you! The link and entire website is broken. ๐Ÿ˜ฆ I liked the bison instead of ground beef and the taco flavors really popped. It was the perfect mix between chili and a taco. Super hearty and delicious!

We served it with… boyfriend’s garlic toast

Recipe found on Simply Delicious
My Rating: 5 out of 5

My Review

Oh my gosh, YUM! The marinade on the pork was perfectly sweet over the savory, tender and juicy meat. The variety of veggies was colorful and so fun. Every bite had crunch, loads of flavor, and made me actually ‘mmm‘ out loud.

  • 1/4 cup honey
  • 1/3 cup hoisin sauce

  • 1/3 cup soy sauce (we used low sodium)
  • 1 teaspoon sesame oil
  • 1 teaspoon Chinese five spice powder
  • 2 teaspoons vegetable oil
  • 1 kg pork neck cut into lengths of around 10cm wide / 1kg pork fillet/tenderloin

for the lettuce wraps

  • baby gem lettuce washed and separated
  • 2 cups cucumber julienned
  • 2 cups carrots julienned
  • 1 cup radish thinly sliced
  • sesame seeds
  • finely chopped chilli, optional

    1. I really like prosciutto when it’s on like a meat & cheese tray but, not cooked & crisped up like this… lol it was weird. The Pork Wraps were actually so good! I wasn’t expecting it!

  1. Everything looks delicious, but yah. Never met a Prosciutto that I liked. Nasty rubbery stuff. ALTHOUGH I think there was a recipe back when I was doing the Meal Kit deliveries that called for CRISPY prosciutto and I think I was instructed to fry it up in a pan. I seem to recall crispy prosciutto was tasty.

Man, I couldn’t even find that Bison recipe in the internet Wayback Machine.

    1. When you get the prosciutto on one of those fancy meat & cheese trays, it’s served all soft & fatty like… it’s really yummy but, I don’t really like it all cooked up except I had it on pizza before & it was good? I don’t know lol. Prosciutto is weird.

That sucks the Wayback Machine can’t even find it! It was a really fun recipe!

    1. We try new recipes almost every week so I’m so happy I have this space to share them with you! ๐Ÿ™‚ The Pork Wraps were def the best out of the three & boyfriend says ‘thank you’ about his garlic toast, hehe! โค

  2. I’ve never been a big fan of prosciutto. It always kind of weirded me out since pork has to be cooked so carefully to be safe and yet prosciutto seems so uncooked lol. I’m sure it’s safe since it’s so common but I just can’t get past that!
Also those lettuce wraps look so good! I’ve never heard of Chinese bbq before lol.

    1. Oh my, IS prosciutto uncooked?? It’s actually really delicious when it’s all soft & raw-like lol, I don’t like it crisped up like this…

The lettuce wraps were awesome, I couldn’t believe how juicy & tender boyfriend cooked the pork. โค

  3. Those lettuce wraps look delicious! Taco chili sounds wonderful, and I definitely want to try that now. I think I would want it without the corn though. I like corn by itself, but I’ve never been a fan of it mixed into other foods.

    1. Oh man, those lettuce wraps made me want to eat more pork loin. I never really ate it at all before! I love corn mixed into foods but, I think the chili would be still so tasty without it. ๐Ÿ™‚
