My Review

Mostly, this tasted like beef and veggies with a plain tomato sauce. If I were to make this again, I’d include mini macaroni noodles. It needed more substance and pizazz.

We served it with… hot dog bun toast πŸ˜€

Ingredients You’ll Need / Changes We Made

  • 1 tablespoon extra virgin olive oil
  • 1 pound organic extra-lean ground beef
  • 1 garlic clove β€” minced
  • Β½ cup onions β€” diced (cut very small)
  • Β½ cup red bell peppers β€” diced
  • 2Β½ cups sweet potatoes β€” diced
  • ΒΌ cup beef broth or water
  • 1 medium zucchini β€” quartered
  • 1 teaspoon Dijon mustard
  • β…“ cup tomato passata or tomato sauce of your choice
  • Β½ teaspoon dried oregano
  • β…› teaspoon crushed red pepper β€” optional
  • Salt and freshly ground black pepper to taste
  • Fresh parsley β€” chopped, for garnishing

My Review

I am PICKY with kale. It has to have the right companions and the right cook on it. In this soup, it shined! For those who are haters of kale, I get it, but try it this way, in this stew. I only wished for the broth to have had a little more heartiness but, instead, it was thin and light.

Ingredients You’ll Need / Changes We Made

  • Canola or (extra virgin) olive oil
  • 1 (12 ounce) package of beef smoked sausage, sliced into circles
  • 1 onion, diced
  • 1 teaspoon Italian seasoning
  • ΒΌ paprika
  • Β½ teaspoon black pepper
  • Pinch salt
  • 2 cloves garlic, pressed through garlic press
  • 2 medium-large carrots, peeled and diced
  • 2 medium-large parsnips, peeled and diced
  • 2 ribs celery, diced
  • 6 baby yellow potatoes, cubed (skin on)
  • Β½ pound (8 ounces) diced butternut squash
  • 6 cups chicken stock
  • 1 cup chopped kale
  • 1 tablepsoons chopped parsley

Wow, wow, wow… YES, YES, YES!!!! This was exactly everything I want in a meal. The glaze and tomatoes could be eaten plain, they were that good but, along with the chicken, nothing could beat it.

We served it with… boyfriend’s garlic crusty bread

Ingredients You’ll Need / Changes We Made

Chicken

  • 2 tbsp olive oil extra virgin
  • 4 chicken breasts
  • salt & pepper to taste
  • 1 tbsp dried basil
  • 1 tbsp minced garlic

Bruschetta

  • 3 ripe roma tomatoes diced
  • 7 basil leaves chopped
  • 1 sprig oregano chopped
  • 2 tsp minced garlic
  • 1 tbsp olive oil extra virgin
  • 1 tsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp pepper

Balsamic Glaze

  • 1 cup balsamic vinegar

  1. The ground beef zuchini feels like an incomplete recipe! Like maybe mix it in with pasta and baked it with some cheese on top MMM! The soup looks like a good fit for a cold night, when you don’t want something too heavy! As soon as I saw the chicken picture I’m like this HAS to be good my gosh I wanna try it! And its quite healthy too?

    1. It felt incomplete as we ate it, too! Baked w/ pasta & cheese (if I could) would have been perfect! The soup was nice but I like thicker, more fatty broths I think LOL. The chicken was excellent & I don’t know, the lady who made the recipe called it ‘healthy’ in her title so I did the same, lol, I would assume she isn’t lying. ;D

I could swear I made that ground beef / zucchini / sweet potato recipe recently, but the other ingredients don’t ring a bell (and sound a lot better!!!) so I’ll have to think about this and maybe even RESEARCH. I will take heed of your suggestion to add mini macaroni! And I love hot dog bun garlic toasts!!

    I’m really bad at cooking chicken…mine is tough 99.9% of the time and I don’t know why. I follow chicken recipes to a T. But I may have to try again because that bruschetta recipe sounds so good.

    1. The ground beef recipe would have been so much better as a sauce, it’ll be awesome with pasta– I hope you like it!

      Boyfriend actually always cooks the chicken his own way. He says some of the recipes make them bad lol.

  3. Omg that bruschetta chicken looks to die for and your excitement about the dish makes me want to try it even more!! If I made it, I’d swap out the bread for gluten free bread and I would try it with peppers instead of tomatoes (since tomatoes freak me out lol)!

  4. I love that you rate and review recipes that you try!! I am always looking for new recipes and it seems that the reviews posted on the original source are always just saying things like, “oh my gosh I can’t wait to try this” or “yum!” – which is not very helpful haha.

    Please keep posting these πŸ™‚ I need some new recipe inspo for my future meal plans!
