My Review

Salmon and mustard go really well together! I loved the sour tang from the lemon juice and the texture of the grainy mustard. The filet was super flaky and cooked to absolute perfection. The potatoes and asparagus were just the right complement.

Ingredients You’ll Need / Changes We Made

  • 1 lemon sliced thinly
  • 1/2 lemon juiced
  • 1 1/2 tablespoons grainy mustard
  • 1 1/2 tablespoons dijon mustard
  • 1/4 cup fresh dill chopped and divided
  • Kosher salt and freshly ground black pepper
  • 1 2- pound filet steelhead or King salmon skin on
  • 1 1/2 pounds small new potatoes red or white
  • 1 pound thin stalk asparagus woody stems removed
  • 4-6 cloves garlic peeled, left whole and smashed with the side of a knife
  • 2 tablespoons olive oil

Boyfriend made the best eggs and french fries. After he tried this dish at a Peruvian restaurant, he wanted to try to make it himself. It didn’t turn out exactly the same but, man, it was good! It had so much flavor and different elements.

We served it with… a brown and wild rice mix

Ingredients You’ll Need / Changes We Made

For the Baked Fries

  • canola cooking spray (we used EVOO)
  • 1 medium, 5.3 oz potato, russet or yukon gold, washed and dried
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • kosher salt and black pepper, to taste

For the Beef

  • 1/2 lb lean sirloin, cut into small, thin strips
  • salt, to taste
  • 1/4 tsp cumin
  • black pepper, to taste
  • 1 teaspoon olive oil
  • 1 medium red onion, sliced into thick strips
  • 2 mini yellow bell peppers or 1 large
  • 1 large jalapeno, ribbed and seeded, chopped
  • 2 cloves garlic, crushed
  • 1 medium tomato, sliced into wedges
  • 1 1/2 tbsp low sodium soy sauce
  • 1 tbsp apple cider vinegar
  • 1/4 cup chopped cilantro

Mmm, mmm! I was super impressed by the creaminess of this sauce. It didn’t taste dairy-free at all. Both the mushrooms and chicken were so plump and juicy. There was no hint of coconut, it was savory, hearty deliciousness.

We served it with… brown and wild rice mix and Sprouts’ onion rolls

  • 2 12 oz chicken breasts sliced in half
  • 8 ounces baby portobello mushrooms sliced
  • 1 tbsp spicy brown mustard deli mustard
  • 1 large shallot chopped to yield 2 heaping tbsp
  • 1 clove garlic chopped
  • 4 sprigs thyme
  • 1 cup chicken broth
  • 2 tsp lemon juice
  • 1 can full fat coconut milk *solidified portion
  • 1 tbsp olive oil

I’m not a fan of salmon (or any meat considering I’m a vegetarian ahah) but I can’t deny your reviews sound great and I’m so glad you enjoyed these dishes. Also I just recently rediscovered my love for mustard this weekend, I’m going to have to incorporate it into my meals more hehe! And that sauce in the creamy mushroom chicken dish sounds so good too 😍😍 I want a creamy sauce dish now haha! Thanks for sharing Hunida- I’ve definitely got some inspo for my meals this week! Yum!

  2. I never thought mustard and salmon would go together. I can imagine what it may taste like but I dont think its close Haha
    Oooh the beef stir fry actually looks good!! I’m intrigued now I’ve never had Peruvian food. I’ll have to find a place near me.
    I would love to eat creamy mushroom chicken, but Alex doesnt like mushrooms lol

  3. Oh my goodness, all of these look so good! I love salmon, and the idea of pairing it with mustard sounds amazing!
    Also I’m super impressed with that beef stir fry. Homemade French fries AND perfectly fried eggs?! That takes some pretty incredible skills! The combination of flavors sounds delicious! Thanks for sharing, lovely!! ❀

    1. Oh my gosh, the salmon & mustard was such a good combo. I think you’d love it! The stir fry was really impressive to me, too! I told him your compliments & he said, “thank you! it’s easy to fry the perfect egg & make homemade french fries” & now, he is still rambling on right now, the instructions on how to do both, he sounds like a cookbook LOLOL.

      1. Oh my gosh that’s too funny about him rambling on like a cookbook! I had to tell Joshua, it had me cracking up! XD For the record, I find it VERY difficult to cook the perfect egg! I have to cook them sunny-side up or the yolks always break. -_-

          1. Lol! Oh my gosh that’s so not true. I just use a low heat and put a lid on sunny-side up eggs so it cooks the top at the same time. For flipped eggs, regardless of my spatula, the yolks still break when I flip them! They are so difficult to flip without breaking.
            Lol anywayyy kitchen struggles XD XD
