Blackened Chicken

My Review: The green bean casserole was definitely the star of this show. It was absolutely phenomenal and hands down the best I’ve ever, EVER had (even including dairy-filled ones!). The Blackened Chicken worked alongside it well. 😉 It was juicy, tender, and there was so much flavor. The spiced rub on top had a nice, peppery kick.

We served it with: The bestbestbest Vegan Green Bean Casserole and Annie’s Homegrown Organic Vegan Mac (Cheddar Flavor)

Ingredients You’ll Need:

  • 4 Boneless Skinless Chicken Breasts
  • 2 Tablespoon Vegetable Oil
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon White Pepper (we just used extra black pepper)
  • 1/4 Teaspoon Cayenne Pepper
  • 1 Teaspoon Salt
  • 1 Teaspoon Paprika
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Dried Thyme

My Review: If you read my journal entries, you may remember when I raved about eating this beautiful baked ziti… now, finally, HERE IT IS! I could NOT believe this was a completely dairy-free creation!! The cashew cream sauce looked exactly like ricotta cheese would but, somehow tasted BETTER. The sauce and meat tasted just right, too. I have to say, this ziti has probably been my top favorite recipe we’ve tried so far.

We served it with: Lisanatti’s The Original Almond Jack Style “Cheese” shredded on top and plain Pillsbury crescent rolls

Ingredients You’ll Need:

For the Creamy Sauce

  • 1 cup raw cashews
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 2 eggs

For the Baked Ziti

  • 1lb gluten-free tubular pasta
  • olive oil
  • 1lb Italian sausage (or ground beef)
  • 1/2 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1 26oz jar marinara sauce
  • 1 14.5oz can diced tomatoes

Ground Turkey Taco Bowl w/ Cauliflower Spanish Rice

My Review: Eh, of course, after having two of the best meals possible… our third one couldn’t follow suit. I understand the “rice” was cauliflower so that’s considered our veggie but, I would have liked some more mixed into the meat still– preferably crunchy ones! Also, whatever was done to the “rice” made it extra soggy and I didn’t taste taco at all while eating this. The seasoning was off and the textures were all way too similar… it was pretty much a bowl of mush!

We served it with: fresh cherry tomatoes and cilantro

Ingredients You’ll Need:

For the turkey tacos

  • 2 tbsp avocado or olive oil
  • 1.5 lbs ground turkey or beef
  • 1/3 cup chopped white onion
  • 1 tbsp chili powder
  • 3 tsp cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 2 tsp minced garlic
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp chipotle powder (optional)
  • 3 tbsp tomato paste
  • 1/4 cup apple cider vinegar
  • 1/2 cup chicken broth may need an additional 1/4 cup

For the cauliflower rice

  • 1 large head of cauliflower
  • 1 tbsp olive oil or avocado oil
  • ½ cup diced onion
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp salt + more to taste
  • 2 tbsp tomato paste
  • ¼ – ½ cup chicken or vegetable broth
  • Fresh cilantro for garnish (optional)

  2. Oh my gosh, your recipe reviews always have my mouth watering! That blackened chicken dish sounds delicious 😍😍😍 You’re gonna make it impossible for me to be full time veggie! And two dishes with a 5/5 rating! Exciting! The Ziti intrigues me because I’ve never heard of it before, although I’m not a great sausage fan so not sure about this one but I’m glad you enjoyed! So funny the last dish got 2/5 stars 😂😂 I wasn’t expecting that after the highly rated first two!

    1. Ohh man that blackened chicken meal was the best ever. ❤ You can always try these recipes with faux meat, maybe?!

      The first two dishes very much deserved the 5 out of 5! For the ziti, we actually used ground beef because I prefer it over sausage, too! Just think of lasagna but with penne pasta instead of layers! YUM! ❤ LOL we were really disappointed with the last meal, so sad!

  3. Green bean casserole is literally the best, so I love that you guys had it with your chicken meal!! That sounds delicious! And I love that it still tasted amazing even with being dairy-free. That’s the sign of an awesome recipe, lol!
    Too bad your taco bowl didn’t turn out very well. Cauliflower rice sounds a bit strange with a taco bowl! I bet that recipe would have been better titled burrito bowls lol.

    1. We needed the green bean casserole since we didn’t get to have any at the buffet we went to on Thanksgiving LOL. It was SO dang yummy, too… mm, mm!! ❤

      Yeah… the taco bowl was a definite MISS.
