Tomato Basil Turkey Meatloaf

My Review: We really enjoyed this turkey meatloaf. It didn’t taste as heavy as beef. The sauce on top was a nice, fresh tomato flavor which I preferred over the usual BBQ or ketchup. I do think it could have been a little more firm and less smushy but I always think that about meatloaf.

We Served It With: Garlic and Thyme Pan Seared Mushrooms and our fave Creamy Garlic Mashed Potatoes

Ingredients You’ll Need:

  • 1 pound ground turkey
  • ¼ cup almond flour (we used regular unbleached all-purpose)
  • 2 tablespoons tomato paste
  • 3 tablespoons chopped fresh basil
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • ¼ cup chopped tomatoes
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped basil
  • Pinch of salt

My Review: Where were the contents of this chili?! There were NONE. Mostly just meat chunks, beans, and onions. The added jalapenos and tomatoes we added on top were definitely needed otherwise this bowl was so simple and too plain!

We Served It With: Chopped fresh jalapenos and tomatoes

Ingredients You’ll Need:

  • 4-1/2 Tbs. vegetable oil
  • 2 lb. beef sirloin tips or lean chuck steak, trimmed of excess fat, and cut into 3/4-inch dice
  • Kosher salt and freshly ground black pepper
  • 2 cups chopped yellow onion
  • 2 to 4 medium cloves garlic, chopped
  • 1 fresh poblano chile, chopped
  • 1 cup chopped fresh yellow bell pepper
  • 2 Tbs. chili powder
  • 1 Tbs. ground cumin
  • 1 Tbs. tomato paste
  • 2 tsp. chopped fresh thyme
  • 1 tsp. ground coriander
  • 1/4 tsp. cayenne
  • 3/4 cup hard cider
  • 2-1/2 to 3 cups beef broth (homemade or lower-salt store-bought)
  • 2-1/3 cups cooked pink beans (home-cooked or canned from one 19 oz. can, rinsed and drained)
  • 2-1/3 cups cooked black beans (home-cooked or canned from one 19 oz. can, rinsed and drained)
  • 2-1/3 cups cooked dark red kidney beans (home-cooked or canned from one 19 oz. can, rinsed and drained)
  • 1 1/2 cups fresh or thawed frozen corn kernels
  • 1 Tbs. cider vinegar

Crispy Chicken Thighs One Pan Meal

My Review: Yum, yum! The title was not kidding about “crispy!” These chicken thighs turned out beautifully. You can hear the skin crack in every bite. The meat inside was juicy, tender, and full of flavor. Oh and I can’t forget to mention that seemingly simple seasoning on top! It was so tasty!! The veggies cooked ever so perfectly alongside it, too.

Ingredients You’ll Need:

  • 6 bone-in chicken thighs with skin
  • 1 teaspoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 tablespoon sage
  • 1 teaspoon salt
  • Your favorite vegetables (we used zucchini, squash, spinach, grape tomatoes, sweet potatoes)
  • 2 tablespoons  olive oil
  • 1 teaspoon salt

  1. Oh boy!!!! Crispy crunchy crackly chicken skin!!!! As it should be. I will be lucky if I can achieve that with our stupid oven, but that recipe sounds good so I will try it. The mushrooms and the mashed potatoes from the meatloaf recipe sound good, too. The last meatloaf I made was so mushy I couldn’t even. Blech. It said to soak bread in milk but it didn’t say how much milk and I think it was too much. Of course you dairy-free people don’t have THAT particular problem. LOL

    1. Yesss!! The chicken skin was so crisp & perfect. 🙂 The mashed potatoes recipe is our absolute favorite & the mushrooms were a first but also very yum! Ahh! I’m sorry your meatloaf was a pile of mush!

  2. Actually I should read your recipe before asking questions since it’s possible this chicken recipe is cooked in a pan, not the oven or perhaps started in a pan and then finished in an oven. Yah, read first before asking questions, Jinjer.

  3. I’ve never heard of turkey meatloaf before!! I will have to look into that since we are avoiding red meat and I miss meatloaf lol. I think it’s funny that you think it should be more firm since my meatloaf is literally always mushy lol. I can’t ever get it to stay together very well! I suppose I need to add in a ton more cracker crumbs or bread crumbs.

    1. This meatloaf was a bit mushy but not the worst. I think I’m just being nit-picky. 😛 We had turkey burgers the other day & the meat was so freakin’ smooshy though, because of what the recipe called for, but we added tons of panko crumbs and it really did the trick to fix ’em right up. 🙂

      1. Hmm it sounds like ground turkey is super soft! I’ve made turkey tacos and didn’t notice it before, but I haven’t tried anything that needed to retain a shape. It’s good to know that more panko crumbs can help so much!! I’ll add more to my meatloaf next time since it’s always mushy.

  4. I don’t really like meatloaf, but the mushrooms on the side look so yummy. You’re right, the chili recipe seems to be quite bare. I love your addition of the chopped jalapenos though. Yum! The last meal looks really good.

    1. I’m not a huge fan of meatloaf either but boyfriend loves it so much, that’s why it’s on our menu quite often. 😛 The chopped jalapenos & fresh tomatoes really did the trick to spruce up that chili! & the last meal was pretty much perfection! ❤
