Catalina Chicken w/ Broccoli

My Review: I had never heard of “catalina dressing” before but, man, is it good!! Everything about this dish was perfect. There was a unique, tasty flavor, the chicken was juicy and plump, and the veggies were made just right with a little crisp.

Ingredients You’ll Need:

Chicken

  • 4 (4-ounces each) boneless skinless chicken breasts
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • salt and fresh ground pepper, to taste
  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/3 cup water
  • 4 to 5 cups broccoli florets
  • 1/2 cup Homemade Catalina Salad Dressing
  • 2 tablespoons low sodium, lite soy sauce
  • 1/4 teaspoon crushed red pepper
  • 1/4 cup chopped cashews

Dressing

  • 1/4 cup Vegetable Oil
  • 1/4 cup Red Wine Vinegar
  • 1/2 teaspoon Reduced Sodium Worcestershire Sauce
  • 1/4 cup No Salt Ketchup
  • 1/2 tablespoon sugar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder (you can also use dried minced onions)
  • salt and pepper, to taste

My Review: We used the Sazon seasoning that the recipe linked us to but, didn’t realize how much MSG was in it. I could barely eat half of this bowl before a huge headache came on. It ended up being all I could taste, too.

Ingredients You’ll Need:

  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 3 bell peppers, chopped
  • 1 (14oz) JENNIE-Oยฎ Fully Cooked Hardwood Smoked Turkey Kielbasa
  • 1 ยฝ cup uncooked rice
  • 3 cup vegetable broth
  • 1 teaspoon saffron or 1 packet of seasoning with saffron (Sazon)
  • Salt and pepper to taste (see notes)
  • Cilantro leaves to garnish

Vegetable Beef Soup

My Review: We really have no complaints about this one! It was a simple and classic beef veggie soup with the right amount of everything.

Ingredients You’ll Need:

  • 1 1/2 lbs beef stew meat
  • 2 1/2 Tbsp olive oil, divided
  • Salt and freshly ground black pepper
  • 1 3/4 cups chopped yellow onion (1 large)
  • 1 1/4 cups peeled and chopped carrots (3 medium)
  • 1 cup chopped celery (3 medium)
  • 1 1/2 Tbsp minced garlic (4 cloves)
  • 8 cups low-sodium beef broth or chicken broth
  • 2 (14 oz.) cans diced tomatoes
  • 1 1/2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 lb red or yellow potatoes, chopped into 3/4-inch cubes
  • 1 1/2 cups (5 oz.) chopped green beans (trim ends first)
  • 1 1/2 cups frozen corn
  • 1 cup frozen peas
  • 1/3 cup chopped fresh parsley

  1. Catalina dressing is one of the best for savory dishes like this! I love drizzling it on taco salad. Mmm ๐Ÿ™‚ That vegetable stew looks amazing! I haven’t had a vegetable stew in so long and now I’m craving it, lol.
    Okay, I have to ask, I read a few times about how the MSG in food has bothered you. How can you tell when a food has a lot of MSG? What does it taste like? I once got an awful headache after going to a Chinese food buffet and I couldn’t help but wonder if it had something to do with MSG. Anyway, just curious lol.

    1. OK I will have to try the catalina dressing taco salad, it sounds so delish!! The soup was really good ๐Ÿ˜€ I think we have a soup or stew every other recipe reviews, don’t we? lol. I don’t know how to explain the taste of MSG… hmm… it’s like salty but not the same kind of salty as salt… it has this thick aftertaste that stays on the back of your tongue. Mostly, yeah, all Asian food uses it unless they clarify that they don’t. ๐Ÿ˜›

      1. The catalina dressing just does such a great job pulling together all the flavors of a taco salad! Haha I used to choose a soup recipe like every other week as well…it’s so good for this time of year!
        Hmm okay I think I know what you mean about the MSG being salty but not the same as salt and having a thick aftertaste on the back of your tongue! I will have to see if I can pick it out next time. Thanks for explaining it!

        1. We’ve never made taco salad so that is so going on our menu next week. ๐Ÿ˜€ Lol I like soup even when it’s 120 degrees out… I don’t know why!! It’s just the best!!

          1. Ooh yay I’m so glad you’ll get to try taco salad! It’s one of my favorites for sure, and I haven’t had it in so long. I once found a recipe for it that used Doritos too and that was pretty good.
            Agreed, soup really is so good! My brother doesn’t like soup and I always thought that was the weirdest thing because it’s amazing lol.
            Definitely not, I think I totally know what you mean! Yep I will have to keep an eye out for it for sure.

            1. Doritos have MSG in them LOL so they actually give me a headache now… plus, dairy. ๐Ÿ˜ฆ I will have to find a recipe without them!! I can’t believe your brother doesn’t like soup, that’s absurd!!

              1. Oh I forgot about the dairy in them, lol. So weird to think of that in chips. I’m sure you will be able to find a good recipe though, a taco salad is basically just tacos without the tortilla or taco shell lol.

    1. It’s hard to make sausages & peppers not taste good, right? It was def disappointing. ๐Ÿ˜ฆ Honestly, I used to never get headaches from MSG until I cut it out of my diet. Now I wish I had never stopped eating it so I still could. ๐Ÿ˜›

    1. Oh no! I’m sorry! Just pretend it is that faux chicken in the photos. ๐Ÿ˜‰ It was the first time I had ever heard of Catalina dressing, too. It was like savory but, also citrusy and a little sour and sweet lol. I don’t know how to explain it but I loved it!

  3. Ok the Catalina chicken and the vegetable beef stew look soooooo good! Stews are perfect for the winter and so filling. I quickly looked over the dressing ingredient and I have most of those ingredients lol.
    Too bad the sausage skillet didn’t turn out the way you hoped.
