Spanish Chicken and Cauliflower Rice (Whole 30)

My Review: I would have preferred chicken breasts over thighs in this dish. It’s weird to say but, they became a bit too moist. The cauliflower rice was good and packed with so much flavor, this time though, I couldn’t help but feel I would have liked rice on the side as well.
Ingredients You’ll Need:
Chicken:
- 1 teaspoon garlic powder
- 2 teaspoons paprika
- 2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1/2 teaspoon Italian spice blend
- 1/2 teaspoon red pepper flakes
- 3-4 boneless, skinless chicken thighs
- 1 tablespoon olive oil for cooking
Rice:
- 16 oz cauliflower rice
- 1 1/2 cup chicken stock
- lemon juice from 1/2 lemon
- fresh cilantro for garnish
- marinated tomatoes for garnish

My Review: Probably one of the most simplest stews we’ve made at home; you could definitely tell by the flavor that not as much love was put into this recipe. The beef was barely given any time to become tender and the broth was missing that hearty thickness. It actually tasted better a couple days later when we heated the pot back up.
Ingredients You’ll Need:
- 1 tablespoon extra-virgin olive oil
- 1¼ pounds beef, top round, cut into ¾-inch pieces
- 3 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 medium onion, coarsely chopped
- 3 medium carrots, peeled and cut into ¾-inch pieces
- 2 medium parsnips, cut into large chunks (optional)
- 3 cups reduced-sodium beef broth
- 4 medium russet potatoes, peeled and cut into large chunks
- 1 tablespoon chopped fresh rosemary
- 1 leek, coarsely chopped
- 2 tablespoons chopped fresh parsley (optional)

My Review: I could have used more sauce atop my noodles but, it wasn’t possible. The noodles kept sucking the sauce right up and it just kind of ruined the whole thing. I could tell there was a nice subtle tomato flavor that wanted to pop but, couldn’t.
For Our Side: Boyfriend garlic-seasoned some crescent rolls

Ingredients You’ll Need:
- ½ pound spaghetti
- 1- pound jumbo shrimp peeled and deveined
- 1-2 teaspoons creole seasoning
- 2 Tablespoon Olive oil or Canola Oil
- 2 Tablespoon unsalted butter
- ½ medium onion diced
- 2 medium tomatoes diced
- 1/2 large bell pepper chopped
- 2 teaspoons thyme
- 1 teaspoon smoked paprika
- 1 Tablespoon minced fresh garlic
- ½ teaspoon red pepper flakes or cayenne pepper optional
- ½ to 1 juice of one whole fresh lemon
- ½ cup chicken broth or more replace with ¼ cup spaghetti water and ¼ cup water with ½ teaspoon chicken bouillon
- 4-6 cups fresh leaf spinach
- Salt and pepper to taste

Boyfriend said “thank you!” 🙂 he just put minced garlic and some other seasonings on top of those Pillsbury crescent rolls. Super simple!!

The chicken and cauliflower rice looks delicious while the stew looks rather thin, but if you make it again you’ll know what changes to make!

The pasta looked good too bad it didn’t taste well! Do you have hello fresh where you’re at? I’ve seen a few YouTubers using it and would like to know a real unsponsored review about it! (Not that I can use hello fresh lol it just piqued my curiosity!)

The pasta looks so delicious so that sucks that it wasn’t up to par. I can tell that the noodles are cooked perfectly to my liking though. They look so good. lol And mmm crescent rolls! I haven’t had those in so long, but I’ve been hungry for one.

The noodles were cooked very well! Luckily, boyfriend always does a good job with them but, I think the sauce was just too thin! & I think we probably eat crescent rolls more than we should, they’re just so tasty lol!

I never knew chicken could be too moist haha usually I’m like “this is kinda dry” 🤣
That stew does look pretty sad. I can visibly see it’s not as thick lol. So weird.
And the last one looks really good, I hate it when the pasta sucks all the flavor into it and it makes the dish look super plain. Love that it has shrimp though.

Hahah yes, exactly… the stew was sad! It was more like beef soup… not thick at all.
I did love the shrimp in the noodle dish 😀 we didn’t let those go to waste but we didn’t save the rest of the leftovers from the meal because the noodles sucked up everything. 😛

I still need to try cauliflower rice!! A lot of people seem to love it, and it sounds like a great alternative to regular rice if you’re watching starch or carbs or something. Plus, you can’t go wrong with more veggies. It looked so good on your plate with the chicken thighs!

The pasta looks really good! Bummer to hear that the noodles were soaking up the sauce! The same exact thing happened to me the other day when I made chicken alfredo. It was even worse when I microwaved it for leftovers!! Sigh lol! Side note, the crescent rolls look delicious!!

Mmm yeah, that dish was really good! 😀 I feel like cauliflower rice just looks like rice, it doesn’t taste the same or fill you up the same! But if you love cauliflower, you will love it!
