Oven Baked Chicken Piccata w/ Maple Bacon Carrots

My Review: I really, really enjoyed our side dish: the maple bacon carrots. They were the perfect mix of savory and sweet, crunchy and chewy. The chicken was a little too wet for my taste. I didn’t really like the lemon flavor but the piccatas on top were yummy.

Ingredients You’ll Need:


  • 4 chicken thighs bone-in skin-on
  • 3 tablespoons butter, melted (we used Earth Balance Original)
  • 4 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 3 tablespoons capers
  • 1/2 cup chicken broth reduced-sodium
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 green onions, cleaned and finely chopped


  • 1 pound carrots around 6 large, peeled and cut diagonally into 1/4 inch slices
  • 2 slices of regular cut bacon cut into 1/2″ pieces
  • 1/4 tsp salt
  • 1/8 tsp ground cinnamon
  • 1 tsp pure maple syrup

My Review: I always appreciate a recipe that includes the whole meal so I don’t have to find a side that would work with the main. Asparagus and onions are two of our fave veggies so this was just delightful. The steak was cooked nicely but, this dish was lacking some oomph. It was quite simple and plain.

Ingredients You’ll Need:

  • 1 1/2 pound flank steak
  • 2/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/3 cup coconut aminos (we used low sodium soy sauce)
  • 1 teaspoon salt
  • 2 teaspoons dried oregano
  • 2 teaspoons onion powder
  • 2 cloves crushed garlic
  • 1 red onion
  • 8 ounces asparagus spears

Ginger Miso Turkey Burgers w/ Honey-Soy Glaze & Roasted Sweet Potato Salad w/ Honey-Lime Vinaigrette

My Rating: 5 out of 5 for both

My Review: I don’t usually prefer sweet potatoes with more sweetness added to them, such as the honey, but it worked super well in this little salad. The cilantro had enough bite to throw off any over sweetness and the hints of lime were definitely there, too. I loved the burger and how the veggies were mixed into the patty, it wasn’t too dry and had tons of different flavors.

Ingredients You’ll Need:


  • 1 1/2 pounds ground white meat turkey
  • 2 tablespoons white miso paste (we used red miso paste)
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon grated ginger
  • 1 tablespoon grated garlic
  • 1/4 cup unseasoned rice wine vinegar
  • 3 tablespoons low-sodium soy sauce (or gluten-free soy sauce)
  • 2 tablespoons honey

Potato Salad:

  • 3 1/2 pounds (~5 large) sweet potatoes, peeled and cubed
  • 4 tablespoons olive oil, divided
  • 2 tablespoons lime juice (~ 1 lime)
  • 1 teaspoon honey (add more to taste, up to 2 teaspoons)
  • 1/4 teaspoon Kosher salt
  • Freshly ground pepper, to taste
  • 1 cup chopped scallions
  • 1 cup chopped cilantro

    Nice looking steak! I made some yesterday, but still haven't figured out my grill properly so it didn't turn out all that well.

  2. Oooh 5 out of 5 for the turkey burger meal… that sounds good and the way you’ve described it makes it sound so tasty I wanna try! Those carrots from the first dish seem really interesting too, I’d never think to put maple syrup with carrots but then again I guess people have them with bacon / waffles etc so it makes sense.   3. Omg that last one is a mouthful but sounds sooo good and it looks good too! I think I only have had sweet potatoes once or twice and I don’t remember if I liked them or not, I think it’s time to give them another chance lol.
    And asparagus….I can’t. I won’t lol. Not since I had it in sushi, it was the most disgusting thing in the world to me, I literally wanted to throw up. I really want to believe that it was just the sushi, not well prepared or whatever, but that left me with a bad taste in my mouth haha

    1. Hahaha yeah it was a lot to type! The sweet potato salad was delish. You should try sweet potato fries or something. πŸ™‚ They deserve another shot from you lol. But I get it if you hate asparagus. Some people find it to be very bitter.

        1. Aww, boyfriend said he used to hate sweet potatoes but after I ordered the fries so many times he started to like them more & more. I wonder what about the asparagus texture bothers you lol the squishy pointy part?!

            And yeah they were squishy but also chewy? And again, it must have been the way it was prepared. A lot of people like to make them grilled so they might taste better that way but I don’t wanna try lol
