Sloppy Joe

My Review: I really liked that there were mushrooms and other veggies mixed into this but, it made it seem more like pasta sauce than a sloppy joe. It was good, though. It did have a lot of flavor, just not the right kind.

For our side: sauteed and roasted green beans

Ingredients You’ll Need:

  • 1 tablespoon olive oil
  • 1 1/2 cups diced sweet onion
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup matchstick cut carrots
  • 3 garlic cloves minced
  • 2 tablespoons tomato paste
  • 2 tablespoons dijon mustard
  • 1 tablespoon light brown sugar
  • 1 1/2 teaspoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1 14.5 ounce can diced tomatoes
  • 1 pound lean ground beef
  • 14 ounces finely minced mushrooms

Baked Spicy Dry Rub Wings w/ White BBQ Sauce

My Review: Ooh, we loved this dry rub! It did have a nice kick but, it’s not super spicy. All of the seasonings worked so well together and the chicken was crispy but, tender. The white BBQ sauce tasted like ranch but, it was successfully dairy-free. So delicious!

For our side: baby carrots and celery sticks

Ingredient’s You’ll Need:

Wings:

  • 2 lbs. chicken wings and drumettes
  • 4 Tbsp. Spicy Dry Rub – recipe follows
  • 2 Tbsp. Aluminum-Free Baking Powder

Spicy Dry Rub:

  • 1/4 cup paprika
  • 2 Tbsp. Kosher salt
  • 2 Tbsp. freshly ground black pepper
  • 1 1/2 Tbsp. garlic powder
  • 1 Tbsp. dried oregano
  • 2 tsp. cayenne powder, more if you like your wings very spicy

White BBQ Sauce:

  • 1 1/2 cups good mayonnaise
  • 1/4 cup white wine vinegar
  • 1 garlic clove, minced
  • 1 Tbsp. coarse ground pepper
  • 1 Tbsp. spicy brown mustard
  • 1 tsp. granulated sugar
  • 1 tsp. salt
  • 2 tsp. prepared horseradish

Three Bean Casserole w/ Kielbasa

My Review: I have never had anything like this before. It was actually fantastic. I am a huge lover of baked beans and kielbasa– if you are, too, you will love this. I only wish there was some rice or noodles in it? Maybe potatoes?

Ingredients You’ll Need:

  • 4 C. Kielbasa, cut into 1/4 in. slices
  • 1 can (15 oz.) red kidney beans, drained and rinsed
  • 1 can (15 oz.) great northern beans, drained and rinsed
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (15 oz.) tomato sauce
  • 3 med. carrots, thinly sliced
  • 2 sm. onions, sliced into thin rings
  • 1/2 C. dry red wine or beef broth
  • 2 Tbsp. brown sugar
  • 1 lg. clove garlic, minced
  • 2 Tbsp. fresh thyme

    1. Aw yay! πŸ™‚ So glad you like my recipe reviews, Allie! I like sloppy joes a lot, too but, these were more like meat sauce on a bun haha. The white wing sauce tasted nothing like BBQ but, it was definitely tasty & unique. πŸ˜€

    1. We already had the celery & carrots in the fridge so it was the perfect side dish. πŸ™‚ I saw a meme that said something about “don’t be the celery on the hot wings plate” & I cried a little lol, I was thinking I was the only one who liked that they add the celery at some restaurants!!

  1. How cool that the white BBQ sauce tasted like ranch without dairy!! I honestly never knew there were so many delicious dairy-alternative recipes until I started following your blog. You two are getting so good at it! That dry rub sounds fantastic too. I bet Joshua would love it since he likes spice.

    1. We really liked that White BBQ sauce but, it could have went with a different name. πŸ˜‰ I can’t believe we are on #54 of our dairy-free recipe reviews already!! There have been so many that turned out well, I can’t believe it either. ❀

      Try the wings!! If you can handle just a bit of spice, you may even like them too!!
