Shrimp Po’Boy

My Review: I honestly couldn’t believe how well these po’boys turned out! The shrimps were extra juicy, not one bit dry, and the crust stayed perfectly in tact. All of the meat was completely and evenly coated. We used shredded cabbage instead of lettuce and it was a great idea, adding more crunchiness to each bite. I absolutely loved the pickles, too! The sauce was unique and tasty but, it was suuuper runny.

Ingredients You’ll Need:

Shrimp:

  • 2 pounds gulf shrimp, peeled and deveined
  • 1 cup stone ground cornmeal
  • 2 eggs, whisked
  • 1 and ½ cups Panko bread crumbs
  • ¼ cup Cajun or Creole seasoning, divided
  • Olive oil or canola oil for frying

Remoulade Sauce:

  • ½ cup low-fat mayonnaise
  • ¼ cup Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon prepared horseradish
  • 1 dill pickle, minced
  • 1 large garlic clove, minced
  • ½ teaspoon cayenne pepper
  • ½ tablespoon paprika

Sandwich:

  • 1 whole-wheat baguette
  • 1 cup shredded lettuce (we used shredded cabbage)
  • 2 dill pickles sliced

Crispy Cilantro Lime Chicken w/ Cowboy Caviar

My Rating: Chicken — 4 out of 5, Caviar — 3 out of 5

My Review: The best thing about this recipe was that the chicken really came out crispy like the title claimed it would! There wasn’t much of a lime or cilantro flavor, though. The meat was tender and juicy, just how I like it but, I was looking for more in the overall taste. The Cowboy Caviar was a fun mix of beans and veggies but, I was also expecting more from it.

Ingredients You’ll Need:

Chicken:

  • 3 Tbs.olive oil, divided
  • Juice of 2 limes
  • 1/4 cup fresh chopped cilantro
  • 1 tsp. red chili or pepper flakes
  • 4 cloves of garlic, minced
  • 2 tsp. brown sugar
  • 3/4 tsp. ground cumin
  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • Fresh cilantro leaves, to serve
  • Lime slices or wedges, to serve

Caviar:

  • 15 oz. can black eyed peas, rinsed and drained
  • 15 oz. black beans, rinsed and drained
  • 15 oz. can sweet corn, rinsed and drained
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 a red onion
  • 2 cup grape tomatoes
  • 2 ripe avocados
  • 1/2 cup cilantro or parsley
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 2 Tbs. cilantro
  • 2 cloves garlic, crushed
  • 1 tsp. brown sugar
  • 3/4 tsp. red chili flakes
  • 1/2 tsp. ground cumin
  • 1 tsp. salt
  • Veggie sticks, nacho chips, or tortilla chips

Stir-Fried Shanghai Noodles w/ Ground Pork & Napa Cabbage

My Rating: 5 out of 5

My Review: Yum yum yum! I really enjoyed this dish. The Udon noodles were squishy but, still bouncy. The sauce was perfect, not too salty or soy saucey, and I loved the crunch of the cabbage (and carrots that we added). It was done cooking so quickly yet, somehow packed a tremendous amount of flavor.

Ingredients You’ll Need:

  • 1/2-3/4 lb. ground pork
  • 1 lb. Shanghai-style noodles, Udon, or cooked fettucine
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 tsp. fresh ginger, grated
  • 2 garlic cloves, finely minced
  • 2/3 cups thinly sliced Napa cabbage
  • 1 green onion
  • sesame seeds, for garnish
  • 2 Tbs. water
  • 1 1/2 Tbs. low-sodium soy sauce
  • 1/2 tsp. sesame oil
  • 1/2 Tbs. oyster sauce
  • 3 tsp. dark soy sauce (we did 3 extra tsp. of the low-sodium soy sauce instead)
  • 2 tsp. Chinese cooking wine or dry sherry
  • 1 tsp. brown sugar or coconut sugar
  • 1/8 tsp. ground white pepper (we used regular black pepper)
  • 1 Tbs. cornstarch
  • Sriracha and/or red pepper flakes, to taste

  1. I love when you do recipe reviews! I feel like you’re so adventurous in the kitchen with testing out different and unique recipes and flavor combos! It totally inspires me to branch out more! The second recipe especially looks great!

  2. Ya had me at shrimp po’ boy. Oh goodness gracious does that look ever good! YUM!! I like that you replaced the lettuce with cabbage- I feel like cabbage is heartier and sounds so yummy with the rest of the ingredients. Wow that chicken and noodles sound like winners too!! Soo much yum in this post.

    1. Boyfriend was really nervous about the breading not sticking to the shrimp but, he ended up having no trouble. 😀 & I was glad we used the cabbage instead because the sauce would have made the lettuce soggy, I think!! This was definitely a good week in food for us!! ❤

      1. Crazy thing–Joshua’s coworkers took him out to lunch yesterday since today is his last day there and he got a shrimp po boy!! I was shocked when he told me because I literally just read your blog with that yesterday lol. Anywayyy just thought I’d share since it was kind of trippy to me lol. 😉
