Corn & Shrimp Chowder

My Review: I’m not sure what the definition of “chowder” is but, for some reason I thought it meant a thicker broth; this was more of a thin soup. The shrimps were perfectly plump, not dry at all and I loved the addition of bacon. The corn made everything a little too sweet, though.

Ingredients You’ll Need:

  • 4 thick slices lean bacon cut into 1/2″ pieces
  • 1 small onion finely diced
  • 1 teaspoon garlic minced
  • 1/2 teaspoon crushed red pepper, optional
  • 1/2 cup dry sherry
  • 1 teaspoon thyme leaves
  • 2 bay leaves fresh if possible
  • 2 1/2 cups seafood or shrimp stock (we used veggie stock)
  • 2 cups potatoes, 1/2-3/4″ dice
  • 1 cup shredded carrots
  • 1 red bell pepper diced
  • 1 1/2 cups milk or half and half (we used Almond Cashew milk)
  • 1 can creamed corn
  • 1 pound small shrimp peeled and deveined
  • sea salt/fresh ground pepper
  • flat leaf parsley

Spicy Lamb Patties w/ Nutty Garlic Sauce

My Review: The Nutty Garlic sauce was fantastic, I’ve never had anything quite like it before! I enjoyed it all over the veggies and the lamb patties. Everything turned out amazingly and worked so well together!

Ingredients You’ll Need:

  • 2 garlic cloves, finely grated
  • ¼ cup almond butter
  • 4 tablespoons fresh lemon juice, divided
  • 6 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, plus more
  • ½ teaspoon freshly ground black pepper, plus more
  • 1 pound ground lamb, preferably shoulder
  • ½ medium onion, finely chopped
  • ¼ cup chopped fresh parsley
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ¼ small head of red cabbage, thinly sliced
  • ¼ English hothouse cucumber, halved lengthwise, thinly sliced
  • 2 radishes, thinly sliced
  • 4 pita bread or flatbreads
  • Mixed tender herb leaves (such as cilantro and mint; for serving)

Miso Chicken Stir-Fry

My Review: Nothing to write home about here. It was a simple stir-fry that used more ingredients than it really needed to.

Ingredients You’ll Need:

  • 3 tbsp miso paste
  • 1/4 tsp ground ginger
  • 6 garlic cloves; minced/grated
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1/2 tsp garlic chili paste
  • 1 red bell pepper; julienned
  • 7 oz . broccoli florets
  • 1 1/2 lbs chicken thighs; sliced into strips
  • 8 oz mushrooms; sliced
  • 1 pkg (17 oz) brown rice vermicelli noodles (we used ramen noodles)
  • High heat cooking oil (we used EVOO)
  • Black pepper

    1. The Corn & Shrimp Chowder was pretty darn good. 🙂 I bet it’d be even better with whole milk or half & half. Hope you enjoy it if you do try it!

  1. Oh, I love it! The chowder + the lamp patties are a must try for me! I wonder if your broth would have been lightly thicker if you used half + half or milk..hmmm.. anyway, I will be using almond milk as well as we recently decided we were no longer going to drink cows milk.

    1. Ooh, you are so right! I didn’t even think of that when I wrote the review. It probably would have been much thicker with half & half or cow’s milk, huh? The almond milk still tasted good though so I hope you enjoy it that way!! 🙂

  2. That lamb patty is so mouth watery. I love the chicken recipe as well. I never tried shrimp though so can’t say anything about that. Hunida, you have a great taste when it comes to food. Honestly I never saw that you review anything ordinary. Love your reviews.

  3. I’m pretty sure that chowder is supposed to be thick and creamy. Like, if you think about clam chowder, it’s thick haha. I feel like this would have been more appropriately termed “bisque” lol. Anyway, it still looks delicious!
    Also, I’ve never had lamb but those patties look tasty.

    1. I always wondered what a “bisque” is?! I love Lobster Bisque but that’s the only kind I’ve ever tried & it’s like the consistency of tomato soup? Lol I have no idea!! Why can’t we just call them all soup?!?

      Lamb is really yummy, if you like gamey meats. 😀
