Tex Mex Sweet Potato Hash

My Review: Wow wow wow, this was so good!! Everything about it was just so perfect. Simple yet, packed with flavor and super filling! For our side: Sunflower Crunch Dole Chopped Salad Kit.

Ingredients You’ll Need:

  • 1 lb grass-fed ground beef
  • 1/2 cup water
  • 1 tbsp ghee (we used Earth Balance)
  • 1 med. sweet potato
  • 1 red bell pepper, diced
  • 1/2 med. red onion, diced
  • 1 1/2-2 cups sliced mushrooms, chopped
  • 2 cups of spinach
  • Optional toppings: fresh cilantro, green onions, avocados, jalapenos, fried eggs

My Review: Looove the way the shrimp were cooked– they weren’t dry at all. Moist, nice, and tender under the wonderfully fresh chimichurri. The potatoes and asparagus complemented the shrimp extremely well though I wish they both had had more of a crisp to them.

Ingredients You’ll Need:

  • 1 cup packed fresh parsley
  • ¼ cup packed fresh cilantro
  • ¼ cup red onion, roughly chopped
  • 3 garlic cloves, peeled
  • 1/3 cup red wine vinegar
  • ¼ cup olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon sea salt
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons ghee or avocado oil, divided (we used EVOO)
  • 2 medium red potatoes, cut into 1” cubes
  • ½ bunch asparagus, ends trimmed and cut in half

Roasted Potatoes w/ Smoked Sausage & Green Beans

My Rating: We do like to make a lot of these smoked sausage recipes because they’re easy and delicious. They taste just as good when reheated, too! I was amazed by the char-level this one reached with the green beans, sausage pieces, and potatoes. The flavor was on point and I just couldn’t stop eating it, yum! For our side: Pillsbury crescent rolls.

Ingredients You’ll Need:

  • 1 pound smoked sausage, sliced into large chunks
  • 2 1/2 pounds red skin potatoes, scrubbed and cut into large chunks
  • 10 ounces green beans (fresh or frozen)
  • 1 large onion, peeled and cut into slices
  • 1/2 cup good-quality Italian dressing
  • Pinch kosher (Himalayan pink) salt
  • Pinch black pepper
  • 1 tablespoon each fresh rosemary and thyme leaves (optional)

  1. Oh my gosh, this has to be your most appetizing post yet! Everything looks amazingly good! I’m torn between the first two on which one I would rather have. I love Tex Mex, but I also love shrimp, asparagus, and potatoes.

    1. Yes, girl, yesss!! We’ve been using the Pink Himalayan salt for so long, regular table salt and sea salt can’t even compare anymore!! I hope you can find some recipes to try through this series even though I eat meat all of the time!! ❤ ❤
