My Review: Oh man, was this tasty!! I usually find chicken breasts to be a bit bland and dry but, not cooked liked this!! The curry sauce that coated the meat was drool-worthy and the little veggie mix on the side, topped with the curry, too… OOH YESSS. For our side: brown rice.
Ingredients You’ll Need:
- 1 tablespoon yellow curry powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1 teaspoon fine sea salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 onion, sliced to 1/2″ rings
- 3 garlic cloves, minced
- 1/2 medium cauliflower, cut into florets (about 2 cups)
- 4 medium carrots, diced to 1/2″
- 3 tablespoons
avocado oil, divided (we used extra virgin olive oil) - 4 boneless, skinless chicken breasts, about 2 lbs.
- 1 tablespoon lemon juice
- 1/4 cup pine nuts, toasted
- 1/3 cup raisins
- 1/3 cup cilantro, chopped
- lemon wedges, for garnish

My Review: The recipe tells us to chop the mushrooms up – in case your kid or someone else you’re cooking for hates mushrooms but, boyfriend and I love them so we kept them whole. I loved the addition of them and I also liked the beans. It was a good dish, it just didn’t WOW me.
Ingredients You’ll Need:
- ½ pound mushrooms
- 1 pound lean ground beef
- 1 package dairy-free chili seasoning
- 1 can beef broth
- 1 15.5-ounce can kidney beans, rinsed
- 1 6-ounce can tomato paste
- 1 cup medium salsa
- 2 cups uncooked elbow macaroni
- Chopped cilantro (for serving)
BBQ Beef Sandwiches

My Review: If you’ve got a nice BBQ sauce, you’ve got a nice sandwich – that was most of the flavor. The meat was tender and easy to bite through, it was yum yum yummy. The coleslaw on the top was refreshing and crisp, too. ❤ For our side: Alexia’s Yukon Select Garlic Fries with parsley and sea salt.
Ingredients You’ll Need:
- 3 tablespoons honey mustard
- 2 tablespoons apple cider vinegar
- 5 tablespoons extra-virgin olive oil
- 1 16 ounce bag coleslaw mix
- Salt and pepper
- 1 1 3/4 pound boneless sirloin steak, thinly sliced crosswise
- 1/2 cup barbecue sauce
- 4
kaiser rolls, split and toasted (we used Brioche buns)
You amaze me with how you find time to cook all this on top of your schedule!! YUM! These all look incredible- DJ would love curry chicken & veggies and I would looooove the Chili mac with sneaky mushrooms. Bookmarking this page for future reference!

That beef sandwich looks banging! I eat cole slaw on my hot dogs, but I’ve never had it on a sandwich like that before. I’m going to have to try that!
