BBQ Chicken Thighs

My Review: There are just too many better baked chicken recipes that we’ve tried before for me to give this any higher of a rating. The skin was extra soggy, there was absolutely no crisp to the skin. For our side: baked beans and brown rice.

Ingredients You’ll Need:

  • 6 chicken thighs
  • salt and pepper
  • 2 tablespoons oil (we used EVOO)
  • ¾ cup of your favorite bbq sauce (we used Sweet Baby Ray’s)
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon dark brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sriracha hot sauce

My Review: I loved the corn and the salsa in this! It was interesting and different compared to a regular beef and macaroni pasta.

Ingredients You’ll Need:

  • 1 lb ground beef
  • 1 onion
  • 2 cloves garlic
  • Salt & pepper
  • 1 cup canned corn kernels
  • 1/2 cup canned black beans
  • 1 (4.5 ounce) can chopped green chiles
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup mild taco sauce
  • 1 cup salsa
  • 2 cups elbow macaroni
  • 3/4 cup cheddar cheese (We included no type of cheese and it was delicious without it but, I’m sure would be even better with it.)
  • 2 tablespoons fresh cilantro

My Review: These porkchops were cooked perfectly. I’m not usually a fan of porkchops but, these were pretty darn delicious. The balsamic sauce coated the whole slab of meat and it was wonderful and juicy inside. The veggie apple medley was lovely, too. Mmm.

Ingredients Needed:

  • 4 bone-in porkchops
  • Salt & pepper
  • Italian seasoning
  • 2 tbsp ghee (we used Earth Balance Original Buttery Spread)
  • 2/3 cup balsamic vinegar
  • 1 tablespoon raw honey
  • Fresh rosemary
  • 1 medium sweet potato
  • 1 1/2 tablespoon melted coconut oil (we used EVOO)
  • 1 large honeycrisp apple
  • 1 small red onion

  1. Just today I had cut up some veggies that I usually cook with tomato sauce and as they were boiling with the pasta I realized I didn’t have any tomato sauce, so I quickly stirred honey into olive oil. Worked better than I thought it would.

  2. The taco pasta looks and sounds really good. I would probably want it without the corn though. I like corn, just not mixed in with other food. (I like it by itself, with butter and salt).

    I never really liked pork chops, but my mom used to fix them a lot as a kid, so I didn’t have a choice but to eat it. It was always plain though, but I would usually dip it in steak sauce or something. The balsamic sauce on it sounds really good.

    1. Really? I love corn in my food & separately, too! Do you add corn at Chipotle? I agree– there’s just something about porkchops that I don’t really like. My boyfriend loves them though so I try to add it in our dinner plans once in awhile… same with meatloaf. 😛 lol.
