Meatloaf Minis w/ Chipotle Mashed Sweet Potatoes

My Review: If you’re only cooking for two (like us), it’s safe to cut everything on the ingredients list in half. We didn’t need 8 servings and were successful in cutting it down to 4. These mini meatloaves were absolutely delicious!! The bacon around the meatloaf definitely turned this traditional dish up a whole notch or two. The meat was well-seasoned and well-cooked, I loved the BBQ sauce instead of the usual ketchupy, tomato sauce. Mmm. The sweet potatoes were delicious, too. I loved the texture and the chipotle chili powder was genius.

Ingredients Needed:

For the meatloaf:

  • 2 lbs ground beef
  • 8 oz mushrooms
  • 1 onion
  • 1 egg
  • 1 tbsp Dijon mustard
  • 2 tbsp BBQ sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • olive oil
  • 8 slices of bacon

For the potatoes:

  • 5-6 cups diced, peeled sweet potatoes
  • 3 tbsp ghee, butter, or olive oil (we used Earth Balance Buttery Spread)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4-1/2 tsp chipotle chili powder
  •  1/3-1/2 cup milk (we used Blue Diamond’s Almond Cashew Blend Milk)

Tandoori Chicken Wings


My Rating: 5/5 stars

My Review: These had an unexpected spiciness to them– I really liked that. All of the spices and flavors popped in my mouth. The chicken was crispy on the edges, some parts were even at that perfect burnt char. The meat was juicy and fall-off-the-bone tender. They were just plain YUM YUM YUMMY!

Ingredients Needed:

  • 1 small onion, small diced
  • 2-inch knob of ginger, peeled and minced
  • 4 cloves of garlic, peeled and minced
  • 2 tablespoons fresh lime juice
  • 1 cup coconut milk (use the solid part first from the top of the can)
  • 2 tablespoons avocado oil, or preferred oil (we used EVOO)
  • 1 tablespoon cumin
  • 1 tablespoon ground coriander
  • 2 teaspoons sea salt
  • 1 teaspoon white pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • 2 tablespoons tomato paste
  • 3.5 pounds chicken wings

Bratwurst Sheet Pan


My Rating: 4/5 stars

My Review: While the beer is “optional,” I recommend you use it! And maybe even a splash more. I was hoping for a more prominent beer taste in the sauce but, it wasn’t really there… it was just a bit too sweet. I did love the cabbage and how charred all the veggies got, the sauce soaked into everything nicely. The bratwurst also had that char (that I keep talking about) to it, it was cooked on time with everything else, it was plump and juicy, and I enjoyed it with the sauce on top.

Ingredients Needed:

  • 6 links of nitrate free Bratwurst Sausages
  • 2 pounds baby new potatoes scrubbed (I used a medley of colors [me, too], but any will work)
  • 1 head of cabbage cored and cut into 8 wedges
  • 1 large onion sliced
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon spicy brown mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 can beer, optional

  1. Chipotle mashed sweet potatoes?? I don’t think I’ve ever had mashed sweet potatoes. I have tried sweet potatoes before but I,m not so sure I liked them as much lol. But interesting.
    And I also don’t think I’ve ever had meatloaf 🤔

    1. Mmm yes, the chipotle sweet potatoes were delish. Boyfriend used to say he didn’t like sweet potatoes but now he does because he had only tried them with other sweet stuff. I think they’re better with something salty, like salt instead of cinnamon. Does that make sense? lol.
      I am surprised you’ve never tried meatloaf before!! I used to hate it, still think it’s kinda weird, but boyfriend LOVES it.

      1. Yeah we made French fries once with sweet potatoes, I wonder if maybe they were missing something else other than salt 🤔 lol
        I think because I hate the name so much? Lol like I don’t really want to try any “casseroles” because they remind me of school lunches 😂😂

  2. I love that your recipe reviews are usually dishes I’ve never even heard of! I want to try pretty much all of them too, but of course I don’t cook so I probably won’t ever get to. Still, I enjoy these posts so much! The first one in this post doesn’t sound ideal to me, but the last two look delicious! I really want bratwurst now. lol

    1. If you ever wanna try your hand at cooking, you should start with the sheetpan dinners. Cooking is hard for me, too, though. I totally understand. That bratwurst meal was SO good!! & I’m so happy you enjoy these posts. 😀 Thanks so much!! ❤
