Sausage Pasta Skillet

My Rating: 2/5 stars

My Review: We ran out of penne noodles so you can see we mixed in some rotini ones. This sauce was plain. It could have used tons more flavor. It really just tasted like sausages mixed with smooshed bell peppers.

Ingredients Needed:

  • 1 packages Italian sausage, 5 or 6 sausages total
  • 1 lb (450g) penne pasta
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 4 cloves garlic, minced
  • Salt and fresh cracked pepper to taste
  • 4 large ripe tomatoes, diced
  • 2 tablespoons crushed tomato
  • 1/2 cup (125ml) vegetable or chicken broth
  • 1/2 teaspoon crushed chili pepper
  • 1 teaspoon Italian seasoning
  • 2 teaspoons fennel seeds, crushed in a mortar
  • 1 scallion, sliced, for garnish
  • Fresh chopped basil, for garnish

Teriyaki Salmon & Stir Fry Noodles

My Rating: 4/5 stars

My Review: I love recipes that include both the protein and a nice side dish like this one. I enjoyed the sauce but, it was a bit too sour. There could have been a few tweaks here and there to make this a 5 star recipe.

Ingredients Needed:

For the Salmon:

  • 4 Salmon fillets
  • 2 Garlic cloves, crushed
  • 1 inch piece of ginger, finely chopped
  • 3-4 Tablespoons teriyaki sauce
  • 2 Tablespoons olive oil
  • Juice of one lime

For the Vegetable Noodle Stir Fry:

  • Small bunch of fresh asparagus, ends trimmed and cut into 2 inch pieces
  • 2 Large carrots, peeled and cut into match sticks
  • 2 Garlic cloves, crushed
  • 1 Inch piece of ginger, finely chopped
  • 2 Tablespoons sesame oil
  • 1 Tablespoon sesame seeds
  • Juice of 1 lime
  • 1/4 Cup/60 ml teriyaki sauce
  • Small bunch fresh coriander, roughly chopped
  • 2 Spring onions, finely chopped
  • 1 Teaspoon salt
  • 6 oz/165 grams rice noodles

Chicken Pot Pie Soup

My Rating: 3/5 stars

My Review: The broth wasn’t as creamy as we expected it was going to be. I appreciated the abundance of veggies but, the broth could have used a kick of flavor.

Ingredients Needed:

Potato mixture:

  • 1 pound organic yukon gold potatoes chopped
  • 1 cup water
  • 1 1/2 cups unsweetened almond milk

Soup:

  • 1 tablespoon garlic oil
  • 2 tablespoons fat of choice
  • 1 1/2 cup chopped carrots about 3 medium
  • 1 1/2 cups chopped celery
  • 1 cup diced green onion or regular onion
  • 1 pound diced organic yukon gold potatoes
  • 3-4 cups broth or water
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 1/2 cups frozen french green beans
  • 1 teaspoon salt divided (or to taste)
  • 2 pounds cooked chicken chopped
