Chicken Fajitas


My Rating: 2/5 stars

My Review: It would probably be easy to find a recipe that’s better than this one. Maybe even buying the butcher’s pre-marinated stuff would be better. I’m not saying this wasn’t good but it was just… really simple, it tasted like plain chicken with too much cumin on it.

Ingredients Needed:

  • 1 lb chicken breasts
  • 2 bell peppers
  • 1 lg sweet onion
  • 8 oz mushrooms
  • 6 tbsp high-heat cooking oil
  • 1 lemon
  • seasoned salt
  • cumin
  • smoked paprika

Salmon Corn Chowder


My Rating: 4/5 stars

My Review: This was really tasty! There was such a good assortment of veggies and textures. I was loving the dill flavor and even more so with the extra lemon juice squeezed over each serving. The salmon could have used a little bit more love (aka salt) before being added into the soup.

Ingredients Needed:

  • ¾ cup raw cashews, soaked
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 3 stalks celery, diced (1 heaping cup)
  • 2 large carrots, diced (1 heaping cup)
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and chopped (2 cups)
  • 1 cup corn kernels
  • 4 cups vegetable broth
  • 1 lb boneless skinless wild salmon fillet, cubed
  • ¼ cup fresh dill, minced
  • 1 tsp salt (more to taste)
  • Freshly ground black pepper
  • Big squeeze of fresh lemon juice

Caribbean Jerk Chicken & Veggies


My Rating: 4/5 stars

My Review: Mmm, okay, the flavor of the sauce was soooo yummy… the charred veggies and tender meat tasted like perfection drenched in it. The skin of the chicken could have been crispier though, it was saggy and sad.

Ingredients Needed:

  • 2 pounds chicken drumsticks, skin on
  • 1 medium red onion, coarsely chopped
  • 1 pounds red potatoes, quartered
  • 1 cup carrot coins or baby carrots
  • 3 celery stalks, chopped
  • 1 cup reduced sodium chicken broth
  • 1 tablespoon fresh thyme leaves, minced (or 1 teaspoon dried thyme)

      1. He has made a recipe before and I really liked it, it wasn’t chicken fajitas, it was all veggies and it was really delicious. He likes to play around with spices 🙂 I’m trying to convince him to blog with me so we can share some of his dishes or recipes 🙂

        1. My boyfriend would throw a temper tantrum if we made anything without meat lol. 😛 If he doesn’t wanna blog, maybe you could just share his recipes on yours!! You’re his wife, it’s not like you’re stealing his ideas!

          1. Lol men., haha Alex is slowly getting used to my non-meat meals, and he actually enjoys them. It’s gotten to the point where he will tell me to add as many veggies as possible haha. We had ceviche today and it was loaded with veggies lol.
            You know, he actually asked me today when I was going to write up his post, and I was like “what are you talking about?” And immediately went “ooooh!! So you do want to?!” 😏 I knew he would give in eventually lol.

            1. We love tons of veggies too but I doubt we’d ever be able to cut out the meat. I think I’ve had ceviche before! Is it that cold seafood soup??

              1. I’d be fine without red meat and only eat white meat and seafood lol.
                And I wonder if you’re thinking of the shrimp cocktail? 🤔 ceviche would be more or less the same as that but without the broth. Basically it just looks like a salad. You cut up veggies and shrimp or imitation crab and toss everything in lemon or lime juice and add salt and pepper. It’s delicious.

                1. Gosh, I don’t think I could live without a burger, a steak, or a juicy rack of lamb once in awhile. 😛 but I love chicken & seafood enough that it would satisfy me if I had to eat that way. lol.
                  Okay okay, maybe I’ve not tried ceviche before or maybe I have lol either way, I’d like to try it again!

                    I forgot to take a photo of when we made it, I may end up making it again over the weekend and I’ll take a photo to show you 🙂
