Deconstructed Teriyaki Beef Kabobs:


My Rating: 5/5 stars

My Review: This was really so delicious. I have no other words for it besides: YUM! If you love teriyaki and beef… you’ll love this! For our side: organic brown rice (it’s underneath all the meat and peppers).

Ingredients Needed: 

  • 2 lbs of beef cut in half
  • 1 each medium red orange, and yellow bell peppers, cleaned membranes removed cut into one inch pieces
  • 1 medium onion peeled and quartered or cut into 1/8 pieces
  • 10 oz. Teriyaki Sauce
  • 1 tbs fresh ginger grated or minced
  • 1 tbs fresh garlic minced
  • 4 oz of orange juice
  • 2 tbs of honey
  • 2 oz of extra virgin olive oil

Beef Stew:

My Review: Eh, I thought this was alright… I enjoyed the variety of veggies but the broth was a little too bland. I prefer a beef stew with a beefier flavor and some wine.

Ingredients Needed:

  • 3 teaspoons olive oil, divided
  • 1 pound beef stew meat, visible fat removed
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 2 1/2 cups unsalted chicken stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1 bay leaf
  • 4 medium red potatoes (about 1 pound) cut in 1-inch chunks
  • 2 large carrots, sliced 1/4-inch thick (about 2 cups)
  • 2 celery stalks, sliced 1/2-inch thick (about 1 1/2 cups)
  • 2 1/2 tablespoons flour
  • 1/4 cup stock

Bacon Wrapped Chicken:


My Rating: 5/5 stars

My Review: Oooh, the bacon-wrapped chicken was amazing!! It was juicy, tender, and packed with all the flavor. For our side: boyfriend roasted baby potatoes and fresh green beans in the oven, no idea what he seasoned it all with but it was perfect.

Ingredients Needed:

  • 5 boneless skinless chicken thighs, each one cut in half
  • 10 slices bacon
  • 2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp fine grain sea salt
  • black pepper
  • fresh herbs as desired I used sage, thyme, and rosemary
