My Rating: 5/5 stars

My Review: Mmm, this chicken was so tasty. Tender and juicy. It was the perfect blend of sweet and spicy. For our side: boyfriend coated onion rings and zucchini slices with Italian bread crumbs and some other spices then, deep-fried them. YUM!

Ingredients Needed:

  • 1 package boneless, skinless chicken thighs
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt (we always use Himalayan pink salt, not sure if that’s kosher?)
  • 1 teaspoon fresh cracked pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon chili powder
  • 1/2 cup honey
  • 2 tablespoons apple cider vinegar

Hamburger Helper:

My Rating: 5/5 stars

My Review: I didn’t miss the dairy at all in this dairy-free version of the popular dish: Hamburger Helper! This was way better than the boxed kind I used to eat as a kid. I have no complaints, it was delish.

Ingredients Needed:

  • 1 lb. ground beef
  • 1 cup uncooked egg noodles
  • 1 cup almond milk
  • ¼ cup diced onion
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • Fresh basil, chopped
  • Salt + pepper to taste

Sweet Potato, Spinach, Bacon, Turkey Burgers:

wp-1523229107740..jpg

My Rating: 3.5/5 stars

My Review: I thought I’d never say it but, there is such a thing as too much bacon. The bacon was very intense in this burger, dominating every single bite.  The patties were not sticking together at all. We kind of had to scoop them onto our buns. We topped our burgers with Chao cheese slices, onions, and lettuce. For our side: Alexia’s Spicy Sweet Potato Fries.

Ingredients Needed:

  • 1 package of bacon (12 oz)
  • 2 medium sweet potatoes
  • 1/2 cup onion, finely chopped
  • 2 cups finely chopped spinach
  • 1 tsp salt
  • 1 tsp minced garlic
  • 1 tsp paprika
  • 2 tsp spicy brown mustard
  • 4 tsp dried rosemary
  • 2 large eggs
  • 4 tbs flour
  • 2 lbs ground turkey

  1. I’ve never been crazy about Hamburger Helper. Mainly because I don’t like ground beef. But I may try a veggie version! I love zucchini 😍😍😍 lol all these meals looked pretty good

  2. I’m not a fan of Hamburger Helper, perhaps I never tried the right one but I don’t know, not convinced lol. The honey spiced glazed chicken sounds really good, I have everything but the apple cider vinegar. And the turkey burger looks good, and I agree, sometimes too much bacon can overwhelm the flavors of the entire dish. Too bad it wasn’t sticking together.

    1. My boyfriend said he didn’t like Hamburger Helper either until I forced him to make this recipe. 😀 He ended up enjoying it!!
It’s totally worth it to buy the apple cider vinegar to make that chicken… it was so yummy & I’ve seen other recipes that called for it, too! Yeah the turkey burger was good but annoying that none of it would stay together probably because too much bacon haha.

      1. I did see that apple cider vinegar could be used for weightloss. I really want to try it. After Seattle, it’s been hard to get back into a healthy eating routine and my bad habits have finally caught up to me so I have to make drastic changes. 😦 LOL
