White Chicken Chili:

My Rating: 5/5 stars
My Review: As you all may know; the meals in my recipe reviews are usually prepared by boyfriend but I, myself, made this one!!! Boy, was I proud when I took my first bite. This soup is so good. It’s a bit spicy, which I really enjoyed, I loved the jalapeño pieces in each bite. The chicken was tender, juicy, and flavorful. The broth was creamy but not coconutty even though there was a whole can of coconut milk used to make this. The balance of flavors was perfect.

Ingredients Needed:
1 tbsp coconut oil (I used EVOO)
1 onion, diced
2 celery sticks, chopped
4 garlic cloves minced,
2 jalapeño peppers, seeded and membranes removed, diced (to make it extra spicy like I did, keep seeds and membranes intact)
1½ lbs of skinless, boneless chicken thighs or breasts (we used thighs)
1 tbsp ground cumin
2 tsp chili powder
1 tsp coriander
1 tsp dried oregano
1 tsp sea salt
⅛ tsp ground black pepper
4 cups of bone broth or chicken broth (we used chicken broth)
1 4-oz can of diced green chili
1 14-oz can of full fat coconut milk
Optional garnish: cilantro, avocado slices, and/or more jalapeño slices

Tater Tot Hot Dish:

My Rating: 4/5 stars
My Review: This is a popular dish from the Midwest. I had never actually had it before but boyfriend has been eating this dish since he was a young boy and we both liked it! This was really tasty and quite simple. The tater tots were crunchy on the outside and the meat was seasoned well. The gravy held everything together, my only wish is that there had been more of it.

Ingredients Needed:
1.5 lbs beef, venison, or turkey meat, browned (and drain the grease if necessary) (we used beef)
1 package of Ore Ida Tater Tots
1 bag (16 oz) of mixed frozen veggies
2 c of gluten free chicken broth
2 TBS of soy milk (we used Unsweetened Original Almond & Cashew blend milk)
1.5-3 TBS of corn starch
pinch of garlic powder
pinch of pepper
pinch of salt

50/50 Bison & Bacon Burgers with Twice-Baked Veggie Potatoes:

My Rating: Burgers – 5/5 stars Potatoes – 2/5 stars
My Review: The burger was delicious. If you’ve never tried a bison meat burger, you need to. It was so juicy and perfectly seasoned. I was surprised a burger could turn out so well without a grill. The potatoes were alright. They were quite plain. The amount of veggies overwhelmed the amount of potatoes. I was hoping for a slight crisp to them but there wasn’t one.

Ingredients Needed:
Burgers:
1 lb Grass-Fed Ground Bison
1 lb Uncured Bacon
1/2 tsp Dried Parsley
1/2 tsp Smoked Paprika
1/4 tsp Garlic Powder
Smoked Sea Salt
Fresh Ground Black Pepper

Potatoes:
1 and 1/2 pound small red potatoes
2 tablespoons olive oil
1/2 teaspoon sea salt
1/2 cup Silk Dairy Free Almond Milk (I prefer the Blue Diamond brand and the Almond & Cashew blend)
1/4 teaspoon black pepper
1/2 teaspoon garlic salt (or regular salt)
1 bell pepper chopped
1/2 cup cooked broccoli chopped
1/4 cup green onion chopped
