Sheet Pan BBQ Smoked Sausage Dinner:

My Review: This dish was simple with only 3 ingredients and the taste really depends on what kind of BBQ sauce you choose. Just make sure it’s one you love and this dish will turn out fantastic. 😉

Ingredients Needed:
2 tablespoons olive oil
1 pound small white potatoes, (about 3 cups) washed, and halved or quartered
1 teaspoon sea salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 pound smoked sausage (kielbasa) sliced thin
1/4 cup barbecue sauce (we used Famous Dave’s Devil Spit)
2 cups broccoli florets, washed and trimmed
1/4 cup shredded cheddar cheese (optional)

Stuffed Pepper Soup:

My Rating: I’ve never actually had a real stuffed pepper before but apparently boyfriend has and he insisted that they’re gross no matter how many times I showed him pictures of yummy looking ones… I stumbled across a soup and we both agreed we should make it! I thought this was only alright though. It was pretty much just a thick tomato soup with bell peppers, ground beef, and not enough rice.

Ingredients Needed:
1 pound lean ground beef
1 large onion, diced
3 teaspoons minced garlic
1 tablespoon olive oil
4 cups beef broth
2 29-ounce cans tomato sauce
1½ tablespoons Cajun seasoning
3 bell peppers, diced
¾ cup minute rice, uncooked
shredded cheese, for topping

Garlic Herb Chicken and Veggie Skillet:

My Review: There wasn’t really a garlicky or an herby taste to this dish. It was just pretty bland and not a dish I’d recommend to anyone since there are so many other better chicken skillets out there to try– don’t waste your time with this one.

Ingredients Needed:
1 lb. boneless, skinless chicken breast, cubed (we used boneless, skinless chicken thighs because they taste better and are cheaper)
1 Tbsp. fresh rosemary (1 tsp. dried)
½ Tbsp. fresh thyme (1/4 tsp. dried)
2-3 Tbsp. (extra virgin) olive oil or avocado oil, divided
1 red bell pepper, sliced
8 oz. button mushrooms, sliced
½ medium red onion, sliced
4-5 garlic cloves, minced
1 cup canned full-fat coconut milk (blend contents of can if separated)
½ lemon, juiced
Sea salt & pepper
1-2 (14 oz.) bags of Earthbound Farm Cauliflower & Broccoli Riced Veggies (we couldn’t find this at the grocery store so we just made regular brown rice)

  1. Omg I can’t believe your bf thinks stuffed peppers are gross. I’ve always loved them! I’ve never heard of stuffed pepper soup though. That sounds good. That sausage meal looks the most delicious though.

    1. Hahaha, I told him you said that and he said he must have never had good ones then. I had never heard of it in a soup either… I also saw a recipe for a Stuffed Pepper Skillet. The sausage meal was the best one out of the three, for sure. 😀

  2. Stuffed peppers are so good! My grandma used to make the best stuffed peppers… They’ve always been my favorite dish. Don’t give up on them, and don’t listen to your boyfriend! If they’re made right, they’re amazing (believe me, I’ve had bad, mushy stuffed peppers, too)!

Lol my boyfriend is the one who makes dinner every night so I don’t want him to have to make something he hates… though I told him you said this and he admits that maybe he has never had a good one and that if I really want them he will make them. 😀 hahaha. I wasn’t too big of a fan of this soup though so I’m not sure I wanna try the stuffed peppers anymore… lol.

  3. Hahahaha see I noticed you used Famous Dave’s devils spit and that stuff is EVIL…. I love Famous Dave’s…. Sweet and Zesty!!
    I know now any recipes of yours I might try I need to know if there is any ingredients that might be a little spicy because you and boyfriend like a LOT spicy!!

    1. Hahaha! You crack me up, Jad. I can taste the spice of Devil’s Spit but still, barely!
      I feel like the recipes should title themselves as spicy if they are spicy but I will try my best to read the comments and introductions to see if there is a mention about spice level for each recipe from now on! ♡

  4. Omg the chicken and veggie skillet is totally something I would eat, and it has mushrooms!!!! But Alex doesn’t like mushrooms lol.
    And really? I wonder what kind of stuffed peppers he’s had, though I admit I haven’t had stuffed green/red bell peppers, I’ve only had the Mexican ones, Chiles rellenos, they’re made with poblano peppers and they’re simply stuffed with cheese (though you can’t have that, can you?) but they’re very delicious.

    1. Aw!! That’s too bad he hates them… they’re so dang tasty! MMM… that sounds so good!! Too bad I can’t have cheese though… I would eat it just to try those though ahah sounds like it’s worth the tummy ache. 😀

        1. Mushrooms are so good! Have him try it on a cheeseburger because how could that not be delicious?! Lol.
          I haven’t found that good of a vegan shredded cheese that i trust to put in a meal yet, only vegan sliced sandwich cheese. 😛

          1. He will take them out I’m not even kidding. I’ll Sautee them and see if he likes them like that better. I also found a recipe where you use mushrooms and add some condiments and bake them and it tastes like bacon? I wonder if I can fool him lol
            I haven’t even looked for vegan cheese but I only recognize daiya and even then, that one takes a while to get used to. If you guys have a pieology over there, they have daiya cheese for their pizzas.

                1. Yeah, it tastes okay but it doesn’t taste like cheese lol. I only like their Alfredo Mac so if you do find it, don’t grab the “cheddar cheese” one. We threw the whole pot out when tried that one lol.

  5. You know, that veggie skillet actually sounds delicious but I don’t think it should be seasoned with JUST thyme and rosemary, salt and pepper. It needs more heat and seasoning to balance out the coconut milk. I would try it again but season the chicken with season salt and marinate it overnight in a criollo brine. Add a lil cayenne to the dish too.

    I don’t like stuffed peppers either. I want to, I just don’t. I’ve made them twice; the second time just confirmed that, naaah, I don’t like ‘em.

    1. Yeah, it seriously needed some more seasoning! The coconut milk didn’t even evaporate like it was supposed to, either lol. I bet it would be perfect if we made the tweaks you suggested but boyfriend would never take that kind of time for dinner. 😦 I had to look up criollo brine because I had no idea what it was lol… I’m still a little unsure to be honest :/
      I wonder if I would like a stuffed pepper!
