Roasted Garlic Potatoes & Sausage:


My Rating: 5/5 stars
My Review: I think this dish was perfect. There was just the right amount of spices and flavor along with an assortment of veggies. Everything was cooked nicely with a little crunch in every bite and enough meat to fill me up.

Ingredients Needed:
1 pound baby red potatoes
8 ounces (1/2 of a 16-ounce bag) petite baby carrots
1 teaspoon of EACH: dried basil, dried thyme, dried oregano, and paprika
1/2 teaspoon onion powder
Salt and cracked pepper
1/4 cup olive oil separated
8 ounces (2 cups) asparagus
1/2 large yellow onion
1 package (13 ounces) skinless smoked sausage
1 tablespoon minced garlic
1/3 cup freshly grated Parmesan (omit this if you are dairy-free like me; it tastes fine without it)
Optional: fresh parsley

Creamy Bacon Ranch Chicken Casserole:


My Rating: 3.5/5 stars
My Review: I really enjoyed how unique this dish was. The squash strings were actually really good but a bit plenty. The ranch was tasty– you would have never been able to tell we made it dairy-free. πŸ˜‰ It had a peppery flavor that I really liked. The chicken was a bit dry though, I must say, but I’m sure there are ways to avoid that problem.

Ingredients Needed:
For the ranch dressing:
1 tbsp dried parsley
1 tbsp dried chives
1.5 tsp dill weed
1.5 tsp garlic powder
1.5 tsp onion powder
1.5 tsp onion flakes
1/2 tsp pepper
1/2 cup mayo
1/4 cup water
For the casserole:
1 spaghetti squash (medium sized)
8 pieces bacon, diced
1 lb ground chicken
1 tsp garlic powder
1 tsp chili powder
1 onion, diced
4 cups broccoli florets
1/2 tsp sea salt
1/2 tsp ground pepper
1 tbsp grass-fed butter or gheeΒ (we used Earth Balance Butter)

Beef & Tomato Macaroni Soup:

My Review:Β I’ve had this dish in so many different ways… called so many different names. I thought this one was pretty good and one of the better recipes, though. Boyfriend and I both exclaimed that we were impressed with this recipe when we took our first bites… of course, there are still better versions out there so I couldn’t give this one a full 5/5 stars.

Ingredients Needed:
1 lb lean ground beef
1 medium onion, finely chopped
2 large carrots, peeled and finely chopped
1 stalk celery, finely chopped
1 red pepper, finely chopped
1 teaspoon minced garlic
2 teaspoons salt
1 teaspoon dried oregano
1/2 teaspoon paprika
4 cups low sodium chicken broth (or use beef or vegetable)
1 (28oz) can crushed tomatoes
1 3/4 cups dry whole wheat macaroni pasta or other small pasta

          1. i did, two pb&j sandwiches that i shared with ciel but…still hungry…but…i gotta go to sleep soon, tomorrow is technically a school day but i’m secretly hoping they close the school due to weather (it’s freaking snowing!!)

              1. it wasn’t I was still hungry when I went to bed 😦 but yeaaa we got a snow day!! I was so freaking happy because mother nature came to visit today lol. I also baked a chocolate cake and cupcakes from scratch πŸ™‚ πŸ™‚ πŸ™‚
