Sweet Potato Spicy Chicken:

My Rating: ★★★★★ 5/5

My Review: Mmm, this was so delicious I have absolutely no complaints. I’d love to eat this again someday soon. 🙂

Ingredients Needed:
1 lb. boneless skinless chicken breasts or thighs, cut into cubes (we chose thighs)
2 sweet potatoes, cut into 1/2-inch cubes
1 teaspoon paprika
1 tablespoon garlic powder
3 tbsp. Franks hot sauce
1 tablespoon coconut oil or ghee (we used EVOO)
3 strips of uncured organic bacon, sliced
1 cup green onions, sliced
Pinch of Sea salt
Pinch of Ground Black pepper

Oven Roasted Rock Fish:

My Rating: ★★★★☆ 4/5

My Review: Okay, we were supposed to use seabass (as you can see in the ingredients listed below) but we couldn’t find any at our local grocery store so we chose rock fish…which neither of us had tried before. The shallot topping was really good and I wanted to shove it all in my mouth at the first taste of it but I got sick of it before it was all gone for some reason–I just couldn’t stand the taste anymore. The mushrooms and asparagus were perfect.

Ingredients Needed:
2 tablespoons fresh lime juice (1 large lime)
1 1/2 tablespoons soy sauce
1 generous tablespoon chopped fresh cilantro
1 large shallot, peeled and minced
5 teaspoons avocado oil + more for baking dish (we used EVOO and it was fine)
2 6-ounce sea bass fillets (each about 1 1/2″ thick) (we used rock fish…I believe you could probably choose any type of fish)
1/2 teaspoon Sea Salt
1/4 teaspoon ground Black Pepper
About 15 Small Bella mushrooms, stemmed and sliced
1 pound Asparagus Spears, trimmed

Chicken Burrito Bowls:

My Rating: ★☆☆☆ 2.5/5

My Review: Everything was just so smooshy. The chicken was very tender though–I loved that but, ultimately, none of it was very flavorful.

Ingredients Needed:
1 tablespoon coconut oil (we used EVOO)
1 garlic clove, minced
1 medium yellow onion, diced
1 pepper, cored and diced (we used a red bell pepper)
1 to 1 1/2 pounds boneless skinless chicken breasts, chicken thighs, or a mix cut into large cubes (we chose thighs)
5 medium sized tomatoes, cored and diced
1 1/4 cups organic low sodium chicken stock
2 teaspoons chili powder
2 teaspoons salt
1 teaspoon cumin
1 cup brown rice, gluten free
1 cup frozen corn
1 avocado, peeled, seeded, diced (we both hate avocados–we did not use any)

  1. the sweet potato spicy chicken looks really good. .And I do NOT like asparagus. I had it with sushi once and I literally wanted to throw up! LOL perhaps they taste different if they’re grilled or something but….I’d rather not lol

    1. It was delicious! Lol my boyfriend cooks all these meals for me, I’m no chef, lol. 😛

  2. I’m not a fan of sweet potatoes but this sweet potato spicy chicken recipe looks and sounds really good. I’ll have to try asparagus sometime since I haven’t before, I’ve heard so many mixed opinions.

    1. Ahhh, I LOVE SWEET POTATOES lol. A lot of people don’t like asparagus because it’s a little bitter but I just love it and so does my bf!! You should try like a buttered recipe or something, you might like it, too. 😀

  3. Mmmm the spicy chicken and the fish sound amazing! I looooooove Sea Bass but it’s so expensive. Every now and then, you just gotta bite the bullet and pay the $30 a pound.

    Fun fact: I’ve never made asparagus. I was always afraid to because I read it was poisonous if improperly prepared. I’m a wee bit clumsy so I thought that’d be a rather ironic way to die.

    1. I don’t know if I’ve ever had Sea Bass! I MIGHT have bought it if my grocery store carried it but they didn’t even have it. $30/lb is pretty steep though!
      I have never heard that asparagus could be poisonous…OH MY GOSH! I’m def doing some research about that now before I eat any more asparagus, lol.
