Roasted Cilantro Chilli Chicken Thighs and Potatoes:

My Rating: ★★★★☆ 3.5/5

My Review: I really liked the cilantro chilli sauce. I think the chicken was a little soggy though all of the vegetables were yummy and crisp.

Ingredients Needed:
500 gm Chicken thighs with bone
250 gm potato cubes
1 red bell pepper
Salt pepper and for seasoning
wedges Lemon to serve
For cilantro chilli sauce:
2 cups Cilantro (loosely packed) fresh leaves
3 – 4 green chills (adjust as per tolerance)
4 cloves garlic
Half onion
Pinch of sugar
Salt, to taste
1/4 cup olive oil

Sloppy Joes with Sweet Potatoes:

My Rating: ★☆☆☆☆  1.5/5

My Review: We put the potatoes in the oven for way over the suggested time and they still seemed uncooked. The sloppy joe itself was waaaay too sweet and overly ketchup-y. Boyfriend and I both did not enjoy this version of sloppy joe…at all.

Ingredients Needed:
2 large sweet potatoes
1 tbsp extra virgin olive oil
1 medium onion, finely chopped
1/2 red bell pepper, finely diced
1/2 green bell pepper, finely diced
1 lb. ground beef
1-2 cups Paleo ketchup
2 tbsp Paleo spicy mustard
1 tbsp honey
1 tbsp apple cider vinegar
1/4 cup water
Salt and pepper, to taste

Stir Fry Chicken with Ginger:

My Rating: ★★★★★ 5/5

My Review: We had made this dish previously and I reviewed it: here. The first time we made it, I said that if we had the right amount of ginger that I might’ve enjoyed it more. My assumption was correct! This dish definitely earned it’s 5th star with the right amount of ginger! 😉

Ingredients Needed:
1 lb of chicken thigh sliced thin
1 cup of sliced yellow onion
1 sliced jalapeno pepper
1/3 cup of ginger sliced thin
2 garlic cloves, minced
2 T of oyster sauce
2 T of soy seasoning soy sauce
1 T of fish sauce
1 T of sugar
2 green onion for garnish chop
3 T of vegetable oil for stir fry (boyfriend used olive oil and it was fine)

    1. Steamers? Oh my gosh that’s so interesting, I’ve never heard that lol! I love learning the differences between states! 😀
      I like sloppy joe most of the time but sometimes it’s too tomato-y/ketchup-y for me!
