Cabbbage, Sausage, and Potato Soup:

I really enjoyed this soup. I ate every drop of it. It lasted 3 days and was still yummy each time. I couldn’t give it 5 stars though because it needed a lot of extra salt for me. Some soups I’ve tried have not needed any salt other than how much the recipe called for.

Ingredients Needed:

1 pound kielbasa sausage*, sliced into bite-sized pieces
2 tablespoons extra-virgin olive oil
3 medium leeks, sliced into ⅛ inch rounds, white and pale green parts only
2 medium carrots, peeled and diced
1 stalk celery, diced
1 small green cabbage, chopped into bite-sized pieces
3 cloves garlic, minced
6 cups chicken or vegetable stock
1 pound red potatoes, diced
1 tablespoon Italian seasoning, homemade or store-bought
1 bay leaf
Kosher salt and freshly-cracked black pepper

The mashed potatoes were perfect but the beef needed more seasoning. It wasn’t very flavorful. After adding a shit ton of salt to it, it tasted better. I mean it does say “to taste” in the recipe but you need to add a LOT. I couldn’t help but feel the beef could have used something more. Other than that, I think it turned out beautifully. You wouldn’t even know it was dairy-free.

Ingredients Needed:

For Mashed Potato Topping:

4-5 yukon potatoes
1 tblsp of Earth Balance Buttery Spread
2 tblsp of unsweetened almond milk
salt + pepper to taste

For Meat Mixture:

1 pound of ground lean beef
1/2 bag of frozen mixed vegetables
1/2 cup of chopped mushrooms
2 tbsp cornstarch
1 cup of unsweetened almond milk
salt + pepper to taste

Turkey Sweet Potato Chili:

I thought the broth should have been a little thicker. It was also a little too sweet. The broth should have went for a spicier taste. I did like the turkey in it and the sweet potatoes were delicious.

Ingredients Needed:

2 tsp. + 1 tsp. olive oil
1 lb. lean ground turkey
1 small green pepper, seeds and stem removed and chopped
1 small onion, chopped
1 T minced garlic
1 T Spike Seasoning (boyfriend used: Paul Bragg’s Organic 24 Herbs & Spices Seasoning)
1 T chili powder
1 tsp. ground Ancho Chiles (or use more regular chili powder if you don’t have Ancho)
2 tsp. ground cumin
2 cans (4 oz. each) diced green chiles with juice (Anaheim chiles, not jalapenos)
1 can (14.5 oz.) petite diced tomatoes
1 can (8 oz.) tomato sauce
2 cups homemade beef stock (or use beef or chicken broth from a can or carton if you don’t have homemade)
1 large sweet potato, diced into cubes (about 1 lb. diced sweet potato cubes)
1 T Green Tabasco Sauce (or more, to taste)
salt and fresh ground pepper to taste

      1. Yeah. Not so much. I think it has more of a cabbagey taste to it. Generally any relative of cabbage – including broccoli and cauliflower had to be just barely cooked. Enough to soften it but not too soft. If you can smell it it is already overcooked.

    the soup and the chili look really good, i bet Alex would love to try the chili. he keeps asking me to make it again, it’s been a while since we last made it lol

  2. Yah, I’m really mad at whoever started the whole “Salt is bad for your health!!!!” panic that has sense been called out for being not so true after all. So hard to get fries with salt already on them at a restaurant now. They think people want to add their own. People do not! Salt needs to be added right when they come out of the oil or it won’t stick. Anyway, I think the experts have now decided it’s actually sugar, not salt, that’s bad for your health, right? Whatever. Back to salt. I have always sucked at putting the right amount of salt in whatever I’m cooking. I only started getting it right when I was getting those Plated meal kits that come with a recipe and all the ingredients to make the recipe. Their salt measurements are SPOT ON. Most of their recipes call for 1/4 teaspoon of salt. I think the ones with potatoes call for 1/2 teaspoon because you definitely need extra salt when potatoes are involved. But yah, so I always start with 1/4 teaspoon for any recipe now and then put in more if needed. I find it helpful to know that I’m going to need AT LEAST 1/4 teaspoon of salt, no matter what. LOL

    1. I agree! People shouldn’t have to add their own salt. In my opinion, if something is made well– it shouldn’t need anything added to it at all when you eat it!!

      I think sugar & salt are both “bad” for you but I doubt we’d be healthy if we cut both out of our diets completely. Who knows though? I could never give up either one!

      I had tried a few meal plans & they really helped us (or more so, boyfriend) get comfortable in the kitchen so now he’s a pro & doesn’t even measure his salt!! I never need to add any to the meals he makes for me unless the recipe is SUPER screwed up.
