Beef & Broccoli Stir Fry:

We enjoyed this stir fry but we’ve had better!

Ingredients Needed:

1 lb boneless round, chuck steak, flat iron, or flank steak, cut into thin 3-inch strips
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon olive, vegetable, or sesame oil
3 cloves garlic, minced
4 cups broccoli florets
1 small onion, cut into strips
½ bell pepper cut into strips
½ cup mushrooms, sliced
hot cooked rice or noodles for serving
For the sauce:
1⁄3 cup reduced sodium soy sauce
⅓ cup water
1 tablespoon brown sugar or honey
1 teaspoon ground ginger
1 teaspoon corn starch

One-Pot Chicken Stew:

My Rating: ★★★★★ 5/5

This stew was perfectly hearty. It warmed me right up & had all the right flavors. Yum.

Ingredients Needed:

1½ lbs. chicken thighs, boneless, skinless, cut into bite size pieces
1 Tbsp. canola oil
3 medium carrots, sliced diagonally into ½-inch pieces
1 medium sweet onion, cut into 12 wedges
6 garlic cloves, chopped
5 cups chicken stock, divided
2 Tbsp. all-purpose flour
1 dried bay leaf
12 oz. baby white potatoes, quartered
¼ cup fresh chopped parsley
salt and freshly ground black pepper

Shrimp Pasta w/ Tomato & Spinach:

My Rating: ★★★★☆ 4/5

This was pretty good. I liked the shrimp, spinach, & tomatoes but I feel the sauce could have used a little more kick for the pasta.

Ingredients Needed:

2 tablespoons olive oil
8 oz (220g) medium shrimp, peeled and deveined
1/4 teaspoon red pepper flakes
1 teaspoon smoked paprika or more, to taste
Kosher salt and freshly ground black pepper, to taste
1 teaspoon italian seasoning
4 roma tomatoes, chopped
1/4 cup fresh basil leaves, chopped
6 oz fresh spinach
3 cloves garlic, minced
8 oz (220g) pene or spaghetti
2 tablespoons high quality olive oil, optional
