Beef Fajitas:

Okay, I admit this is cheating a little bit since we didn’t find this recipe online or really even make this dish. We bought this pre-marinated & seasoned, beef sliced up, already mixed in with the veggies from the butcher at Smith’s. It was rather sweet, I wish we would have just made it ourselves. I liked how tender the beef was though; I thought it was going to be tough & chewy.

Roasted Chipotle Wings:

The seasoning on this chicken was SO yummy. The skin was crispy & the meat fell off the bone then melted in my mouth. For our side: we made regular whole wheat spaghetti noodles with Earth Balance’s “butter” & minced garlic, green beans mixed with corn. In the recipe, there is a cilantro dipping sauce to make as well–boyfriend did make it but I couldn’t try it because it’s not dairy-free.

Ingredients Needed:

2 lbs chicken wings
1 T smoked paprika
2 t chipotle powder
2 t granulated garlic
2 t brown sugar
1 t coriander
1 t cumin

Chimichurri Steak Pasta w/ Broiled Tomatoes in Marinara:

My Rating: ★★★★★ 5/5

Mmm, while I wish we had chosen a better cut of steak–it was not this recipe’s fault. The chimichurri sauce was perfectly tart & herby, the broiled tomatoes in marinara had the right amount of sweetness. We weren’t sure if everything was supposed to be mixed together but we ate it like they were two different sauces (like a half & half pizza). In the middle where the sauces did end up touching a little, I didn’t think it tasted so bad but I enjoyed it as two different flavors, it was fun to eat it that way.

Ingredients Needed:

1 16 oz box Penne Pasta
1 24 oz jar Marinara Sauce
1 lb lean steak (sirloin, etc)
10 oz package of cherry or grape tomatoes, halved
2 c fresh flat leaf parsley
1 lime (juice and zest)
1/2 cup + 3 T olive oil, divided
2 T minced red onion
1 T minced garlic
1 T dried chimichurri or Italian seasoning blend
1/2 t red pepper flakes

    1. Aw, yay! Thank you! I’m so happy that you like them. ❤ I look all the recipes up on Pinterest & I'm dairy-free so I think maybe that's why the dishes are a bit more unique!
