Stir Fry Chicken w/ Ginger & Brown Rice:

This is a traditional Khmer dish that my mom would make at least once a week. I looked it up on the internet and found a recipe that had familiar ingredients. Boyfriend did an amazing job at making this, it was so good. We didn’t have enough ginger though so I kind of rated this recipe unfairly with a 4 because I do think if we had enough ginger, I’d have given it a 5!

Ingredients Needed:

1 lb of chicken thigh sliced thin

1 c of sliced yellow onion

1 sliced jalapeno pepper

1/3 c of ginger sliced thin

2 garlic clove mince

2 T of oyster sauce

2 T of soy seasoning soy sauce

1 T of fish sauce

1 T of sugar

2 green onion for garnish chop

3 T of vegetable oil for stir fry

Honey Mustard Chicken, Potatoes, & Broccoli:

Mmmm, boyfriend and I really enjoyed this meal. The mustard sauce was delicious and it was awesome that the recipe was a full meal, we didn’t need a side because it included making potatoes and broccoli.

Ingredients Needed:

1 t olive oil

8 chicken thighs

1/2 t sea salt

4 red potatoes, chopped

1 head of broccoli, chopped into florets

1/4 c each: Dijon mustard and honey

2 T grainy mustard

1 large garlic clove, finely minced

1/4 c water

Moroccan Chicken Stew w/ Brown Rice:

This was so delicious, I was actually excited to eat the leftovers the next day…I am rarely ever excited for leftovers. It was such a perfect stew, I added a little salt and brown rice and it became the perfect meal!

Ingredients Needed:

4 chicken breasts boneless, skinless

2 T olive oil

2 white onions slice one onion and roughly chop the second onion

1 28 ounce can crushed tomatoes preferably fire roasted

1 inch fresh ginger (about 1 tablespoon) chopped

3 cloves garlic

1 t turmeric powder

1 T cumin powder

1 T coriander powder

2 t cinnamon powder

3 medium carrots (about 6 inches long) peeled and diced

2 1/2 c chicken stock (600 ml) aim for a lower sodium stock

2 T brown sugar or use coconut sugar for paleo

1 T tablespoon red wine vinegar

1 c medjool dates (100 grams) seeds removed and chopped into small pieces (we did not add these in our stew)

    The honey mustard chicken looks sooo bomb! I would love to try it! Also the moroccan chicken stew! ugh!! why did I come across this so late at night?! D:
