Roasted Veggie and Chicken Sausage Penne Bowls:

Yummy, I loved everything in this penne bowl. It was so flavorful–everything in it mixed so well together. I highly recommend this dish! It even tasted good the next day…I will admit I ate it cold and I almost even liked it better like that. Am I nasty?

Ingredients needed:

2 medium sweet potatoes, peeled and cubed into ½” pieces

1 yellow onion, chopped into 1″ pieces

2 T olive oil

1 t garlic salt

½ t chipotle powder

1 bunch asparagus, ends trimmed and cut into 2″ pieces

12 oz. Aidells® Chicken & Apple Sausage (we did not use Aidell’s and it was fine, lol)

6 oz. (1/2 box) Barilla® Gluten Free Penne

¼ c pesto (homemade or store-bought)

Italian Wedding Soup:

We had never had parsnips before but, we were pleasantly surprised by them. Boyfriend and I both enjoyed the taste and crunch they added to this soup but I can’t help but think they were the reason why it all turned out a little overly sweet? It was so sweet to the point that it was overwhelming and kind of ruined the whole thing but we were able to eat it until our stomachs were full…we just didn’t save the leftovers, ya know what I mean?

Ingredients needed:


2 lbs ground beef

1/2 c fresh spinach, minced

1/2 c fresh parsley, minced

4 cloves garlic, minced

1 large egg

1/2 c breadcrumbs


3 c sliced carrots

3 c peeled and diced parsnips

1 large onion, finely diced

4 cloves garlic, minced

2 T olive oil

1 can (28 oz) Italian-style diced tomatoes

6 c chicken broth

1 c uncooked orzo pasta

2 c  coarsely chopped fresh spinach

2 T minced fresh parsley

This was pretty good. Super simple and I liked it a lot but I wish there could’ve been a bit more flavor to it!

Ingredients needed:

4 lbs (14 count) Chicken Legs or drumsticks (we did 2 lbs)

1/4 colive oil (we used light, not extra virgin)

4 garlic cloves, pressed or minced

4 T fresh parsley, finely chopped

3 T lemon juice from 1 large lemon

2 T dijon mustard
