My boyfriend and I just moved into a new apartment in a totally different part of Las Vegas. We’ve drove around and discovered so many restaurants that we’ve never heard of. We’ve already been able to check out two different places so far!

But, we still have the goal of eating at home more often! And we (and by ‘we’ I mean my boyfriend, lol) did cook up a few yummy meals this week. 🙂

Chicken and Dumplings:

Rating: ⭐️⭐️⭐️⭐️ 4.5/5

The dumplings were fluffy and chewy, and oh, so perfect. The broth had that rich and hearty chicken soup flavor. It was even better the next day when I heated it up on the stove.

Ingredients needed:

6 bone-in, skin-on chicken thighs
2 celery stalks
1 onion
2cloves of garlics
Olive oil
Dried thyme
Bay leaf
About 11c of chicken stock
2c mixed frozen vegetables
2c flour
1t baking powder
1T chopped parsley

Chicken Meatloaf w/ Dairy-Free Garlic Mashed Potatoes and Steamed Broccoli:

Meatloaf Rating: ⭐️⭐️⭐️⭐️ 4/5

My boyfriend mixed the ketchup with a spicy BBQ sauce and it was the perfect blend. The chicken was spiced so nicely, I never had one bland bite. Though, the directions warn that if the chicken is overworked it could become dry and ours came out a little dry but not horribly. I’m not a huuuge fan of meatloaf but I’d eat this again, definitely.

Garlic Mashed Potatoes Rating: ⭐️⭐️⭐️⭐️⭐️ 5/5

These were perfect, garlicky mashed potatoes. I will continue using this recipe over and over again. They were better than traditional mashed potatoes made with dairy products because my tummy wasn’t in knots!

Ingredients needed:

For meatloaf:

1lb ground chicken
1/2c finely crushed potato chips
1t onion powder
1/2t garlic powder
1/4c + 1T ketchup (we mixed in BBQ sauce because we don’t like it so ketchup-y)
1 egg
1 1/2t Worcestershire sauce

For dairy-free garlic mashed potatoes:

1 1/2lb Yukon Gold potatoes (we used red potatoes)
2 cloves garlic
1/2c chicken broth
1T olive oil

Turkey Tots w/ Sweet Potato and Red Onion Hash:

Rating: ⭐️⭐️⭐️ 3.5/5

Ah, this was interesting. It was so weird picking up a nugget and not tasting chicken. We sadly lost our box of panko somewhere so we used crushed potato chips. We didn’t salt the turkey because I thought the potato chips would be salty enough but, I think I definitely would have enjoyed this meal more if we had properly salted the turkey and actually had our box of panko but it really didn’t turn out so bad this way.

Ingredients needed:

1lb ground turkey
3/4t garlic powder
1/2t onion powder
3/4c panko bread crumbs
1/4t dried parsley
