September so far

I made a goal for my boyfriend and me to cook at home more often (in this post here) then, I made a grocery list of items from 6 different recipes I found online and we went to our nearest Smith’s and grabbed what we needed. I’ve also been eating dairy-free and have made a series of posts (here and here) for those exclusive items. That’s been going semi-well. In my list of goals I said I’d try to eat meatless for one day of the week but I’m throwing that goal out the window right now. While I did buy these Morning Star Farms veggie sausages:

And I really did like the taste of them. Even better than real sausages…I accidentally ate these sausages with eggs…and maybe some ham, too! (And banana pancakes) So, it didn’t end up being a meatless day at all– I couldn’t even eat one completely meatless meal.

One of the meals I had chosen was a meatless coconut curry but we haven’t made it yet and since we’re due for another shopping trip anyways, I’ll probably buy chicken to add in it… πŸ™ˆ (We do choose to eat organic, antibiotic-free, hormone-free, preservative-free, free-range, etc. meat only so that makes us a little less cruel, right?!)

We went out to eat twice even though there was food in the fridge to cook. My boyfriend is the chef in our house and he was too tired from work one of those nights so I think it was ok that we went out to give him a break, I mean, I guess I could have cooked that night but if I had– we’d probably have had to go out to eat afterwards anyways, lol. On the second night we went out to eat, it was because we had to go to the mall to get me a new mascara from Sephora so, naturally, we got behind on time and I didn’t want to get to work super late– going out was the quicker route.

All of the recipes I chose use no dairy products except for in the first recipe (we made this last Friday); we had to use butter:

For our side: We made Daiya’s Alfredo Mac (I reviewed this already in my last dairy free me post) and just some frozen green beans.

Our Saturday meal was not very tasty at all:Sausage and Pepper Primavera
Taste test: ⭐️ 1/5 (1 for the sausage)

For our side: We had bought a big tub of a spring mix salad and topped that with homemade croutons:

You just cut up a slice or two of whole wheat bread, put them in a single layer on an aluminum foil lined baking sheet, drizzle the bread pieces with extra virgin olive oil, a little dry parsley flakes, himalayan pink salt, and ground black pepper, pop them in the oven on bake at 350-375 degrees for 10-12 min!

Curried Chicken Drumsticks with Carrots

Taste Test: ⭐️⭐️⭐️ 3/5

For our side: We chose baby carrots and an Uncle Ben’s rice. The baby carrots were so yummy and the drumsticks were good and juicy but could have used more flavor. I do not recommend this flavor of Uncle Ben’s though (so salty!):

I know I’ve told you just about enough times that my boyfriend and I are ridiculously obsessed with sushi so it may come as no surprise to you that on Monday, we were brave and tried an AYCE sushi restaurant we had never been to before. I know I promised no more posts about Sushi Neko but I never promised no more posts about sushi itself, right?!

We went to this wonderful spot in Chinatown, in walking distance from Sushi Neko. It was called Yama Sushi: We really enjoyed this place even though the inside decor was rather bland and boring. The food was fresh and delicious. I can’t wait until we can go back (yes, already)– I NEED to try a lot more items on their menu. This place is AYCE but all of their appetizers are full-size so you can’t really try as much stuff on the menu as you’d like.I knooow I’m not supposed to eat dairy but green tea ice cream is my absolute favorite and I will never pass up mochi balls!

On Tuesday we went to Meadows Mall:We stopped at Cinnabon to grab a Classic Cinnamon Roll that put my stomach into knots before we even finished eating it but it was YUM:Then we went to one of our absolute favorite spots in China Town:On Wednesday, we went back to cooking at home:Healthy Turkey Sloppy Joes

Taste Test: ⭐️⭐️⭐️ 3/5

For our side: We had wheat toast and frozen green beans and a mix of the Cali Medley frozen veggies.

This meal was pretty good but since we cut the serving in half I think that we might have messed up the measurements a little. It was a little too tomato paste-y.

Our last meal we had from our latest grocery shopping trip was tonight:

Spicy Chicken with Sweet Potatoes

Taste Test: ⭐️⭐️⭐️ 3/5

For our side: We had the sweet potatoes, of course, and we just used frozen broccoli florets.

This meal was done rather quickly, my boyfriend wasn’t in the kitchen long at all. It ended up tasting like that, too, though. It was rather simple but not bad. I loved the potatoes!

Other than food:

I did go to work 5 days last week like I had promised myself but this week it’ll end up only being 4 days because I’m taking tonight off. My Aunt Flo is on her way so I should be going since I can’t go while she’s here and that really puts a damper on my bank account each month. I just really don’t feel up for it today and I’m really hoping that I’ll be able to work tomorrow and Saturday and that Aunt Flo comes on Sunday.

My boyfriend and I are saving up to move into a 2-bedroom, 1.5 or 2-bathroom apartment hopefully before 2018 gets here. He lost his wallet awhile back and his social security card was in it since we needed it so often as we were transitioning from Minnesota residents to Nevada residents. So, all we need is for him to go get that and save enough money then we’ll be out of this small and cramped 1-bedroom! I can’t wait, we think a bigger apartment will help with our cat problems. I don’t know though because they always fight about who gets to lay in the bed with us and there will still only be one bed and one of each of us. It IS time for us to move though because this place is extremely over-priced for what we’re getting– we only chose to live here because it was the only place we could get approved for when we first arrived in Las Vegas and moving is hard so we just stayed. Also, our neighbor is really starting to annoy us. My boyfriend was friends with him at first but then he became way too needy and clingy so we told him to leave us alone and he still won’t. Every time he runs into us outside he says something along the lines of, “are you just going to ignore me, Alex??!!” LOL, I do not know what’s wrong with him. Maybe he has zero friends and I can totally see why, if that’s the case.

I’ve gotten behind on reading books and I’m scared that some of the books I really want to read are going to be automatically checked back into the library before I get to them! Since I’ve been going to work more often I’ve been so much more exhausted and waking up at nearly 4pm everyday which doesn’t give me much free time before I have to get back to work.

  1. Great job cooking so much! That’s something we’ve struggled with as a couple for 25 years. We’re better than we were, though so we’re progressing – and slow forward movement is still movement, right? πŸ˜‰

    The Vietnamese food looks fantastic. It may be just the thing to push me over the edge to get off my behind and make breakfast. πŸ™‚

    Oh – and as for the reading. I have to say that that’s one of the only things I find really annoying about checking out e-books. With a real book you can choose to take a day or two’s fine and just finish it but there’s something so jarring about the app just saying “Nope, you’re done with this now.”

    1. Thank you! My boyfriend does the cooking and I just choose the recipes. 😊 He’s doing a wonderful job…I think every other time we have tried to cook at home, it failed miserably because I was the one cooking. πŸ˜† And you’re absolutely right! As long as you’re progressing a little. πŸ˜‰

      I love Vietnamese food. Sadly, in Vegas there’s no good pho (I’m guessing you know what that is?) but we still eat the dishes in my post often. πŸ˜› Hope you had a nice breakfast!

      I know right?! And the app makes the expiration date turn red once there’s only 7 days left and it freaks me out! Lol

  2. So much food! Haha it’s good you’re at least trying towards your goal. Eating out adds up but twice a week is not awful. Also, I’m a terrible cook so I feel you.

    Hopefully you guys can move into a new apartment soon! A bigger place is always nicer and more exciting. And if you’re already paying a lot now for what you have, and you find a 2 bedroom for the same price – the choice is obvious lol.

    And work is the main reason I cut back on my reading! I’m too tired most nights after work to pick up a book, and I choose Netflix to relax and then pass out. It sucks lol

    1. Lol food is my favorite thing in the world, I’m pretty sure! πŸ˜› Lol, I ordered those Home Chef meals for like a month and it helped us save a li’l $ but I always messed up the cooking so I got sick of it. πŸ˜‚

      Ugh, yeah I’ve found a lot of 2-bedrooms for even cheaper than what we’re paying for now. We just have a hard time saving $ and my boyfriend’s credit isn’t so good so it’s also hard to get approved. A lot of landlords don’t trust dancers, either. A lot of places want me to pay my full lease at once which is ridiculous.

      Ugh I love reading but when I’m exhausted I can only get through a few pages before my eyes close.

        And I gotcha! Unfortunately it seems everything is based off of credit score when it comes to living in the city – places in Pittsburgh are like that, too. And that is ridiculous! Nobody can do that, and if you could, you might as well buy your own home. It’s all about money.

        And that’s exactly my problem! I love reading, too, but after work my brain is too fried and my eyes can’t focus well. It sucks

      3. Gotcha! I’m guessing that’s just as hard, though. Some places are so damn picky. And right? You’d probably have better luck that way πŸ˜‚ but that’s so much work, too.

        And I’m hoping! Work is giving me crazy hours now because someone got fired, so I’m going to try to attempt to find some time here and there lol.

      4. Yeah buying and maintaining a house would be a hell of a lot more work than finding a new apartment but it would def be a dream come true.

        I mean most people at this place work 50-60 hours so I can’t bitch too much lol. But my manager fired the other guy working cashiering, and one of the new girls (who is the good one and knows her shit) has a fucked up schedule this month cuz she coaches softball (I think it’s softball). But that’s just it! My paycheck will be a little nicer lol.

  3. I hope you and your boyfriend find a bigger apartment soon. I’m currently living in a 1 bedroom also with my boyfriend and our pets so we definitely need more space.
    Also thanks for sharing that dressing lol it reminded me that I wanted to look for a better salad dressing other than the regular ranch kind I normally use. The meals look pretty good.
